{"id":530946,"date":"2025-10-27T11:01:17","date_gmt":"2025-10-27T11:01:17","guid":{"rendered":"https:\/\/www.europesays.com\/uk\/530946\/"},"modified":"2025-10-27T11:01:17","modified_gmt":"2025-10-27T11:01:17","slug":"chef-stuart-ralston-opens-vivien-cocktail-bar-in-edinburgh","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/uk\/530946\/","title":{"rendered":"Chef Stuart Ralston opens Vivien cocktail bar in Edinburgh"},"content":{"rendered":"<p class=\"standfirst u-standfirst\">Chef and restaurateur Stuart Ralston will open Vivien on the former site of Fhior in Edinburgh on 5 November.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"Vivien Edinburgh\" width=\"650\" height=\"410\"  src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/10\/DSC09219.jpg\" data- class=\"wp-image-898823 size-full lazyload\"\/>Rebekah George will head up the bar programme at Vivien<\/p>\n<p>Named after poet Ren\u00e9e Vivien, who lived during La Belle \u00c9poque in Paris, the \u2018intimate\u2019 cocktail bar will be located underneath Ralston\u2019s new restaurant Vinette.<\/p>\n<p>The bar aims to \u2018embody her rebellious and inquisitive spirit, as well as aesthetic principles of decadence\u2019.<\/p>\n<p>Rebekah George will head up the bar programme, which will include both classic cocktails and signature serves.<\/p>\n<p>The latter includes The Strawberry Thief, made with white rum, Campari, strawberry, tropical rooibos, lime and soda.<\/p>\n<p>Meanwhile, the bar\u2019s house Freezer Martini features gin, artichoke, basil and rosemary brine, and dry vermouth.<\/p>\n<p>Bar snacks will also be available, including potato mille-feuille beurre blanc and Ortiz anchovies with lemon butter.<\/p>\n<p>\u201cAfter closing [Edinburgh restaurant] Aizle, it felt important to mark a new chapter,\u201d said Ralston, who also operates Michelin-starred restaurant Lyla in the city. \u201cVinette and Vivien are about creating spaces that feel warm, social, and a little indulgent.<\/p>\n<p>\u201cI\u2019m especially proud that I\u2019m opening them with people who\u2019ve been on this journey with me \u2013 Jade [Johnston, co-owner], who has been integral for more than a decade, and my brothers Scott and Calum, who are stepping into leadership roles.<\/p>\n<p>\u201cThis feels like the group\u2019s natural next project, but with the same commitment to quality we\u2019ve always had.
