Insomnia Cookies, a brand with more than 300 stores worldwide, is known for its freshly baked cookies, cookie sandwiches and indulgent shakes served into the early hours.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"liverpoolecho\">Founded in 2003 by <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/whats-on\/whats-on-news\/queues-expected-until-4am-new-32718433#:~:text=A%20spokesperson%20for%20Insomnia%20Cookies,is%20a%20dream%20come%20true.\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Seth Berkowitz<\/a>, who came up with the idea as a college student craving late-night treats, the company has since expanded across the UK. The company now has locations in Birmingham, Nottingham, and three sites in Manchester. New branches are also on the way in Newcastle and Bristol.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"liverpoolecho\">Liverpool\u2019s first<a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/whats-on\/whats-on-news\/queues-expected-until-4am-new-32718433#:~:text=A%20spokesperson%20for%20Insomnia%20Cookies,is%20a%20dream%20come%20true.\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\"> Insomnia Cookies bakery<\/a> will open in the former<a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/all-about\/liverpool-city-centre\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\"> Sips cocktail bar on Slater Street<\/a>, with doors officially opening on Saturday, December 13.
