To this select group \u2013 whose members already include such outstanding and diverse establishments as <a href=\"https:\/\/guide.michelin.com\/en\/comunidad-de-madrid\/madrid\/restaurant\/coque\" target=\"_blank\" rel=\"noopener\">Coque<\/a>, in Madrid; <a href=\"https:\/\/guide.michelin.com\/en\/andalucia\/marbella\/restaurant\/skina\" target=\"_blank\" rel=\"noopener\">Skina<\/a>, in Marbella; or <a href=\"https:\/\/guide.michelin.com\/en\/pais-vasco\/errenteria\/restaurant\/mugaritz\" target=\"_blank\" rel=\"noopener\">Mugaritz<\/a>, in Errenteria \u2013 our Inspectors have added five new restaurants, each with its own distinct and captivating culinary personality.<\/p>\n<p>In Barcelona, three establishments have received the distinction for the first time: <a href=\"https:\/\/guide.michelin.com\/en\/catalunya\/barcelona\/restaurant\/aleia\" target=\"_blank\" rel=\"noopener\">Aleia<\/a>, which stands out for its pared-back, ingredient-led style;\u00a0<a href=\"https:\/\/guide.michelin.com\/en\/catalunya\/barcelona\/restaurant\/enigma\" target=\"_blank\" rel=\"noopener\">Enigma<\/a>, a benchmark for consistent creativity; and <a href=\"https:\/\/guide.michelin.com\/en\/catalunya\/barcelona\/restaurant\/mont-bar\" target=\"_blank\" rel=\"noopener\">Mont Bar<\/a>, the gastro-bar that takes tapas to the next level. In inland Catalonia, Two Stars have been awarded to <a href=\"https:\/\/guide.michelin.com\/en\/catalunya\/bellvis\/restaurant\/la-boscana\" target=\"_blank\" rel=\"noopener\">La Boscana<\/a>, which is committed to revolutionizing the role of fruit in contemporary cuisine. In Spanish cities, newly Starred restaurants rub shoulders: <a href=\"https:\/\/guide.michelin.com\/en\/catalunya\/barcelona\/restaurant\/taberna-kamikaze\" target=\"_blank\" rel=\"noopener\">Kamikaze<\/a> and <a href=\"https:\/\/guide.michelin.com\/en\/catalunya\/barcelona\/restaurant\/scapar\" target=\"_blank\" rel=\"noopener\">SCAPAR<\/a> in Barcelona; <a href=\"https:\/\/guide.michelin.com\/en\/comunidad-de-madrid\/madrid\/restaurant\/emi\" target=\"_blank\" rel=\"noopener\">EMi<\/a> and <a href=\"https:\/\/guide.michelin.com\/en\/comunidad-de-madrid\/madrid\/restaurant\/eter\" target=\"_blank\" rel=\"noopener\">\u00c8ter<\/a> in Madrid;\u202f<a href=\"https:\/\/guide.michelin.com\/en\/andalucia\/malaga\/restaurant\/palodu\" target=\"_blank\" rel=\"noopener\">Palod\u00fa<\/a> in M\u00e1laga; or <a href=\"https:\/\/guide.michelin.com\/en\/pais-vasco\/es-donostia-san-sebastian\/restaurant\/itzuli\" target=\"_blank\" rel=\"noopener\">Itzuli<\/a> in Donostia-San Sebasti\u00e1n.<\/p>\n<p>But it is not only urban settings that are fertile ground for Stars. Many small towns \u2013 some off the beaten track \u2013 are home to projects that have integrated the remoteness of their location into their identity. For example, <a href=\"https:\/\/guide.michelin.com\/en\/aragon\/tella\/restaurant\/casa-ruben\" target=\"_blank\" rel=\"noopener\">Casa Rub\u00e9n<\/a> is in the Aragonese Pyrenees, surrounded by untouched nature, and <a href=\"https:\/\/guide.michelin.com\/en\/galicia\/sober_3313368\/restaurant\/vertigo-1205008\" target=\"_blank\" rel=\"noopener\">V\u00e9rtigo<\/a> is perched atop a cliff of the Ribeira Sacra. <\/p>\n<p>It is also worth mentioning that in this edition of The MICHELIN Guide Spain, some destinations have upped the ante with the addition of new Stars. Alongside Barcelona, which has seen further Two- and One-Star establishments join its already extensive ranks, Andalusia is proving to be a force to be reckoned with. This year, the Inspectors have discovered a multitude of establishments that are championing local recipes, putting a new spin on ancestral dishes and breathing new life into the culinary heritage of their respective regions. Several new Stars shine bright precisely on account of this principle \u2013 but they do not limit themselves to reproducing traditional flavours; rather, they reinterpret them, deploying technique and creativity. A case in point is <a href=\"https:\/\/guide.michelin.com\/en\/pais-vasco\/amorebieta-etxano\/restaurant\/la-revelia\" target=\"_blank\" rel=\"noopener\">La Revel\u00eda<\/a>, with its solid Basque foundations; another is <a href=\"https:\/\/guide.michelin.com\/en\/comunidad-de-madrid\/pozuelo-de-alarcon\/restaurant\/ancestral-1241234\" target=\"_blank\" style=\"\" rel=\"noopener\">Ancestral<\/a>, which serves up a fresh take on the cuisine of La Mancha, while preserving the authenticity of the original.<\/p>\n<p>In the new 2026 selection, this deep connection to the land is also reflected in the use of local ingredients \u2013 which has become something of a mantra \u2013, with absolute respect for the seasons and for growers. In line with this ethos are new One-MICHELIN-Starred restaurants, such as <a href=\"https:\/\/guide.michelin.com\/en\/pais-vasco\/bilbao\/restaurant\/islares\" target=\"_blank\" rel=\"noopener\">Islares<\/a>, in Bilbao; <a href=\"https:\/\/guide.michelin.com\/en\/canarias\/puerto-de-la-cruz\/restaurant\/el-taller-seve-diaz\" target=\"_blank\" rel=\"noopener\">Taller Seve Diaz<\/a>, in Tenerife; or <a href=\"https:\/\/guide.michelin.com\/en\/region-de-murcia\/yecla\/restaurant\/barahonda\" target=\"_blank\" rel=\"noopener\">Barahonda<\/a>, in the Region of Murcia.<\/p>\n<p>Other establishments that fete and promote local cuisine through the prism of influences from other continents, especially Asia and South America, stand out from the crowd.
