And I\u2019m going to put kimchi in it,\u201d he says cheerfully in a clip from the team\u2019s \u201cDay in the Life\u201d feature, before pausing to acknowledge the inevitable reaction. \u201cI think in Italy I could be arrested.\u201d<\/p>\n<p>That alone might have been enough to send Italian traditionalists into a tailspin. But Jorgenson doesn\u2019t stop there, happily finishing the dish with Sriracha and a scattering of cheese.<\/p>\n<p>&#13;<br \/>\n\u201cEdo\u2019s going to be so pissed,\u201d he adds, referencing teammate <a href=\"https:\/\/cyclinguptodate.com\/edoardo-affini\" title=\"Edoardo Affini\" target=\"_blank\" rel=\"noopener\">Edoardo Affini<\/a>. A beat later he offers a half-apology that is anything but remorseful: \u201cThis is ridiculous. I\u2019m sorry to all the Italians, but this is what I\u2019m eating.\u201dCulinary chaos\u2026 but surprisingly sensible<\/p>\n<p>The horror on behalf of an entire country aside, Jorgenson\u2019s Frankenstein bowl of gnocchi, fermented cabbage and hot sauce is, nutritionally speaking, actually pretty solid. Two fried eggs, a generous helping of carbs, a hit of protein and a portion of gut-friendly kimchi make for a recovery meal a sports scientist could defend, even if an Italian grandmother could not.<\/p>\n<p>His off-bike routine then continues in equally laid-back fashion. Once fed, he heads into the centre of Nice for a French language class \u2014 the kind of detail that only reinforces why he\u2019s become one of the peloton\u2019s most likeable characters. Between the Idaho charm, the quietly chaotic food choices and the willingness to laugh at himself, it\u2019s not hard to see why fans have warmed to him so quickly.<\/p>\n<p>Jorgenson\u2019s \u201cloveable nerd\u201d persona was already well-established thanks to his co-star turn in <a href=\"https:\/\/cyclinguptodate.com\/victor-campenaerts\" title=\"Victor Campenaerts\" target=\"_blank\" rel=\"noopener\">Victor Campenaerts<\/a>\u2019 bus vlogs earlier this season.
