He went to the gym, cooked at home, followed the low-fat rules &#8211; and still, the weight wouldn\u2019t shift.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">At his heaviest, he <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.mirror.co.uk\/news\/health\/i-became-dad-50-forced-35146906\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">tipped the scales<\/a> at over 15 and a half stone. Now 59, Steve is a picture of health at 12 stone &#8211; and he credits his transformation not to intense workouts or calorie counting, but to one overlooked nutrient: fibre.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;I was doing it all wrong,&#8221; says Steve. &#8220;I exercised daily, but I was still obese. Steve began researching nutrition in depth, and what he discovered turned decades of dieting advice on its head.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;The idea that exercise alone leads to weight loss just isn\u2019t supported by the data,&#8221; he says. &#8220;Exercise is great for your health and I still do it every day &#8211; but for losing weight, it\u2019s all about food. And fibre is the key.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">That revelation led Steve to create The Fibre First Diet, based on the principle of putting fibre-rich foods at the start of every meal. &#8220;When you eat fibre first &#8211; think salad, leafy greens, seeds or nuts &#8211; it slows down your digestion. You feel full sooner, and you eat less.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;Plus, it helps manage blood sugar and insulin levels, which are crucial for weight control.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Steve explains that when insulin is present in the bloodstream &#8211; typically after eating carbs &#8211; the body struggles to burn fat. That\u2019s why he avoids most starchy foods like bread, rice and potatoes, focusing instead on natural fibre sources.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;The trick is in the fibre-to-carb ratio,&#8221; he explains. &#8220;Not all fibre-rich foods are helpful if they come with a load of sugar. I stick to foods where fibre is higher than carbs &#8211; things like seeds, nuts, leafy greens, berries and avocados.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">He\u2019s also strict about cutting out ultra-processed foods (UPFs), which he believes are at the root of the nation\u2019s health crisis. &#8220;People are starting to realise that crisps and fizzy drinks are bad for you, but they\u2019re still eating things like protein bars and processed ready meals thinking they\u2019re healthy.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;If something in the supermarket has a big health message on the front &#8211; \u2018low fat\u2019, \u2018100% natural\u2019 &#8211; it\u2019s probably hiding something,&#8221; he says. &#8220;Real food doesn\u2019t need a label. You don\u2019t see signs on broccoli saying \u2018high in fibre\u2019. But you\u2019ll see a protein bar with \u2018gut healthy\u2019 written all over it \u2013 and it\u2019s got more sugar than a Mars bar.&#8221;<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/05\/0_Steve-Bennett.jpg\" alt=\"Steve Bennett\" loading=\"lazy\"  \/>Steve is now on a mission to change consumer demand(Image: Supplied)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">For Steve, a good rule of thumb deciding whether it&#8217;s something your grandparents would recognise as food. &#8220;If your grandmother wouldn\u2019t recognise it as food, don\u2019t eat it.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;Fish should look like fish &#8211; not be breaded, frozen and shaped into a rectangle. If it comes in a shiny packet and it\u2019s shelf-stable for a year, you should be asking questions.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">And his results speak for themselves. &#8220;Once I started putting fibre first, cutting back on processed carbs and focusing on real food, the weight just came off. I\u2019ve lost three and a half stone, and I\u2019ve kept it off.
