Skyline Sips is back for its third summer season at Level 5, St James Quarter \u2013 bringing rooftop views cross Calton Hill and Leith.<\/p>\n
Positioned between Everyman Cinema and Roomzzz Aparthotels, this year the pop-up bar sees the team join forces with Smirnoff to spotlight the brand\u2019s Miami Peach vodka with its Pink Flamingo cocktail, \u201cIt\u2019s our way of bringing a taste of Miami to Edinburgh,\u201d said Sips Managing Director Micheal Donovan.<\/p>\n
The seasonal venue has also partnered with St James Quarter\u2019s Salerno for wood-fired Neapolitan pizzas, and Gordon Ramsay\u2019s Street Burger to serve burgers and wings.<\/p>\n
Michael said, \u201cOur first Skyline Sips at St James Quarter launched in 2022 and we\u2019re genuinely pleased to return for a third time. It\u2019s an ideal rooftop setting in one of Edinburgh\u2019s most iconic locations.\u201d<\/p>\n
He added, \u201cWe\u2019ve created a friendly, chilled-out bar offering quality food, a wide range of drinks and one of the best views in the city. It\u2019s designed to be an oasis of calm \u2013 whether you\u2019re winding down after work or enjoying a night out with friends.\u201d<\/p>\n
Established in 2016, Sips is an Edinburgh-based pop-up bar business with experience across major events including the Royal Highland Show, Fly Festival, Musselburgh Racecourse and the Edinburgh International Festival.<\/p>\n
