And it is evolving still &#8211; with the emergence of high-rise apartment complexes and skyscrapers<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Trof too has gone through a number of iterations throughout the years. For some, memories of the place might be those of crowded Friday nights full of live music and dancing, whilst others may know it best for its midweek bourbon selection or its hangover-cure breakfasts on a Sunday morning.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">This week, the venue has reopened following its biggest overhaul to date.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Tweaking its name to The Trof, the revamped space aims to be both an independent pub and a dining room serving refined British food. Led by restauranteur Matt Nellany and chef Jamie Pickles, who are both also behind <a aria-label=\"\" class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.manchestereveningnews.co.uk\/all-about\/deansgate\" rel=\"follow noopener\" tabindex=\"0\" target=\"_self\">Deansgate<\/a> restaurant and cocktail bar Stow, it\u2019s something that aims to keep the place at the heart of the Northern Quarter as it has been since 2003.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\"><strong class=\"Strong_strong__e2x35\"><a aria-label=\"Click here Link opens in a new tab.\" class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.manchestereveningnews.co.uk\/newsletter-preference-centre\/?view=Solus&amp;mailingListId=d1c9a1cf-d773-47a3-b51a-f456316221bc&amp;utm_source=solusarticle\" rel=\"follow noopener\" tabindex=\"0\" target=\"_blank\">Click here <\/a>for the latest on Manchester&#8217;s food &amp; drink scene, gigs and more in our CityLife newsletter<\/strong><\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cI think we all have our own very different memories of this place,\u201d Matt, who first joined the venue as General Manager in 2017, tells the Manchester Evening News. \u201cIt\u2019s fluctuated through so many different things over the years &#8211; I think most people will remember it as a bar &#8211; but in recent years, it has leaned more towards a pub atmosphere with comfort food.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">&#8220;That\u2019s what we\u2019ve basically doubled-down with here. We wanted to be a bit more consistent in terms of what we were doing and to elevate.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Three years ago, Matt saw the opportunity to take over the venue from its original owners Mission Mars, led by Adelaide Winter and Joel Wilkinson, putting it back as a NQ independent. Separating the two spaces was quite a big thing for us.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">For the recent revamp, the venue\u2019s menu has been described as a \u2018love letter\u2019 to British pub classics and local produce. Starters feature the likes of hogget mince on dripping toast and dressed Devon crab salad, whilst mains include an ox cheek pie with Ratte potato mash, Salmon with trout roe beurre blanc and mussels, and Pork collar with cabbage and bacon. Desserts stem from favourites like sticky toffee pudding to a cherry Bakewell tart in a nod to Jamie\u2019s Peak District upbringing.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">The downstairs pub also serves a range of snacks, like homemade scotch eggs, crab on toast, pork pies, cheese on toast and crispy potatoes with tartare sauce. I think the crab on toast is as about boujee as it gets. It\u2019s a typical pub snack that\u2019s been elevated and created to work perfectly with a pint. I think they\u2019re the best pub snacks you\u2019ll be able to find anywhere around here, really.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">In 2024, Matt and Jamie opened Stow, a bar and restaurant on Bridge Street with a &#8216;live open fire&#8217; concept, which has gone down particularly well in the city. It has also received a mention in the Michelin Guide for its \u2018imaginative\u2019 menu which \u2018feels like a restaurant for its our times\u2019.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cThe public house should be one of the most welcoming places in the world, right?,\u201d Jamie explains when asked how Stow might have helped curate The Trof&#8217;s new identity. \u201cYou should be able to come inside, with no pretences and just enjoy yourself. But that all comes down to being hospitable. It\u2019s about making people feel at home, and that\u2019s definitely something we\u2019re trying to do here. Everything we do here &#8211; whether it\u2019s the service, the menu, or the atmosphere &#8211; always has to be top notch.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">And asked why Trof has managed to remain a key part of the Northern Quarter, Matt and Jamie say its a combination of reasons &#8211; but it\u2019s mostly down to the fact that it\u2019s not been so confined in what it is. \u201cIt\u2019s been adaptable,\u201d Matt suggests. \u201cIt started off as a bit of a brunch place, it was one of the first places that really brought avocado on toast to the Northern Quarter like 20 years ago &#8211; that craze was borne in Trof.<\/p>\n<p><img decoding=\"async\" alt=\"The Trof's new revamp as a pub and dining room is about it becoming more welcoming\" loading=\"lazy\"  src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2026\/05\/0_JRP_MEN_010526_trof_010JPG.jpg\" \/><\/p>\n<p aria-label=\"The Trof's new revamp as a pub and dining room is about it becoming more welcoming\" class=\"ImageCaption_caption-title__ccyQU\" data-testid=\"caption-title\">The Trof&#8217;s new revamp as a pub and dining room is about it becoming more welcoming(Image: Jason Roberts \/Manchester Evening News)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cVery quickly after that, the nightlife backed things up and it turned into more of a bar. For a few years, it was one of those places that was always busy until about 3am. We noticed that then dropped off, and we built up the food element.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cAs long as I\u2019ve known the Northern Quarter, it\u2019s changed dramatically. One thing we\u2019ve learnt is that everybody has a story about Trof, the amount of people who have told us they had their first date here and now they\u2019re married.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cIt\u2019s quite tough sometimes to compete with that nostalgia when you\u2019re trying to do something different and change it up.
