She told WBAL-TV 11 News there weren&#8217;t many baking supply options available to her at the time.&#8221;Maybe some grit, maybe there&#8217;s a bad taste in your mouth. That&#8217;s what people think of when they think of gluten-free,&#8221; Shepard told WBAL-TV 11 News. &#8220;Well, I didn&#8217;t want that for my gluten-free things. I have celiac disease. I&#8217;m eating this for the rest of my life, so I wanted something better.&#8221;She began experimenting with wheat-free alternatives to create her own flour mix that eventually led to the launch of gfJules, an Owings Mills-based gluten-free baking products company. Shepard told WBAL-TV 11 News that her bread and pizza dough mixes are among her bestsellers.&#8221;Those are the things people miss when they go gluten free,&#8221; she said. Shepard said gfJules also gives her a platform to educate others on celiac diagnoses and lifestyle.&#8221;Celiac is really difficult to diagnose. That&#8217;s why, even today, with all the information we have out there, the average diagnosis time is still six to 10 years,&#8221; Shepard told WBAL-TV 11 News.Shepard said Celiac Awareness Month is necessary because food is so central to social life, dietary accommodations are vital to inclusion.&#8221;Eating is part of our everyday lives in so many ways,&#8221; Shepard told WBAL-TV 11 News. &#8220;It can be part of a business lunch, it can be dating, it can be Thanksgiving.
