Cottage cheese has had a big glow-up. I, along with many other people, used to have a strong dislike of cottage cheese because I was afraid of the texture. But the first time I actually tasted it for myself, I was obsessed. It was creamy, rich, and silky, and you could add it to practically anything for some more protein. Now, I will eat any and every cottage cheese brand.

Now that I’ve entered cottage cheese land, I’ve tried my fair share of recipes using it. I’ve tasted cottage cheese cinnamon toast, Giada’s lemon and cottage cheese pasta, cottage cheese buffalo chicken dip, and so many more. So, when I saw a creator on TikTok make tomato toast with a thick layer of cottage cheese on it, I just had to try it.

How to Make This Cottage Cheese Tomato Toast

  • Roast the tomatoes. Pour a pint of cherry tomatoes into a baking dish. Top with minced garlic, drizzle with olive oil, and sprinkle with salt. Then, roast them in a 425°F oven for about 25 minutes.

  • Toast your bread. When your tomatoes are finishing up, add your bread to the toaster so everything will be ready at the same time.

  • Assemble the toast. Spread a thick layer of your preferred cottage cheese. The creator in the video suggests Good Culture (the winner of our cottage cheese taste test!), but I used the Friendship Dairies brand. Spoon the tomato mixture on top of the cottage cheese. Top with any desired toppings (I did a little olive oil, salt, pepper, and red pepper flakes). Then, enjoy!

My Honest Review of This Cottage Cheese Tomato Toast

I could not slow myself down while eating this toast. For something so simple, the taste is outrageously delicious. The video’s creator says that she was inspired by a cafe that makes burrata tomato toast. I am burrata’s No. 1 fan, but the cottage cheese on this toast was perfect. You get that creamy, rich texture of burrata, but with way more protein to keep you full for longer.

When I heard this was a riff on a burrata toast, I took that as my sign to dress up this toast with some Italian garnishes. I gave the toast a finishing “glug” of olive oil and a fair sprinkling of red pepper flakes. It dressed the toast up perfectly. As I’m writing this, I’m genuinely craving another slice.

I think part of what made this toast so good for me was the cottage cheese’s consistency. I normally buy Trader Joe’s cottage cheese but it’s a little loose and liquidy. So to give this tomato toast a fair shot, I used the “California Style” small curd cottage cheese from Friendship Dairies and it was amazing. The consistency was smooth, creamy, and not watery at all. It was perfect for a toast situation like this, because the bread didn’t get soggy and held up well while I was eating.

Using a whole pint of cherry tomatoes means that you’ll probably have some extra if you’re only serving one. Just store them in an airtight container in the fridge and save for later. I can’t wait to enjoy my leftovers soon.
