Valverde described Fonda Toro as a casual, approachable Mexican restaurant with coffee and cocktails. The restaurant will also have a sushi bar.
The key at Fonda Toro, Valverde said, is a casual atmosphere and affordable prices. “We don’t want to say it’s a neighborhood spot and then overprice ourselves,” he said.
Appetizers will range from $17 to $19. Taco plates will start at $18. Those who opt for steak or sushi might end up spending a little more, he said. “The food is generous, the point of view is confident, and nothing is precious,” according to a company statement.
Coeval Studio is redesigning the former Meyboom Brasserie on Greenville Avenue, with a new patio on the side and a sushi bar and Japanese garden in the back. They’re trying to restore the original terrazzo floors, which were once covered with tile.
Valverde and Gallegos, both East Dallas residents, were drawn to the neighborhood because of the open-air markets on weekends and the walkability.
“We’re excited to be part of an iconic street like Greenville,” Valverde said.
Fonda Toro is at 2100 Greenville Ave., Dallas. It’s expected to open in November 2026.
