FULTON MARKET — The long-anticipated Gibsons Tavern will open this November in Fulton Market.
Gibsons Tavern, first announced in 2023, will offer “an elevated take on classic American cuisine” inside a vintage-inspired space with vaulted ceilings inside an 11-story office building at 925 W. Fulton St.
The menu is slated to feature “refined tavern fare, from classic comfort dishes and Gibsons’ signature steaks to fresh seafood and unforgettable desserts,” according to a news release. The bar program will also include a nod to the Prohibition era with reimagined “timeless cocktails.”

“Gibsons Tavern is a tribute to the great American tavern, reimagined through the lens of Gibsons Restaurant Group’s commitment to hospitality and quality,” Steve Lombardo, CEO of Gibsons Restaurant, said in a statement. “We’re proud to bring this concept to life in Fulton Market, one of Chicago’s most dynamic neighborhoods.”
Gibsons, which opened in 1989, is part of a Chicago restaurant dynasty and is regarded as one of the most successful restaurant chains in the United States, according to Restaurant Business Online. Several of the company’s restaurants are listed as the top 100 highest grossing restaurants in the United States.
Gibsons is known for its location on Rush Street and for serving signature steaks and large portions. Other Gibson Restaurant Group concepts in Chicago including Gibsons Italia, Hugo’s Frog Bar & Fish House, LUXBAR and Quartino Ristorante & Wine Bar.
