TX Whiskey is taking another swing at its Experimental Series, this time with a spirit that skips the barrel entirely. The Fort Worth distillery has released TX Whiskey Unaged Rye Bourbon White Dog, its 14th experimental expression, a bold and unfiltered look at what rye bourbon tastes like before the oak has its say. 

Crafted from a mash bill of corn, rye, and malted barley, and bottled at 120 proof, the White Dog leans into the raw interplay of grain, yeast, and distillation. The aroma opens with sassafras, warm clove, and fresh corn husk, accented by ripe banana. The palate follows with licorice and allspice before shifting into malty sweetness and finishing with spice and fruit. 

“This release builds on the foundation we laid with last year’s Unaged Wheated Bourbon White Dog,” said Craig Blair, Head Blender at TX Whiskey. “But this time, we’re telling a different story, starting with a rye bourbon mash bill and a commercial yeast strain. That shift changes everything: from the grain-forward nose to the drier, spicier palate.” 

White Dog serves as both spirit and study, showing how subtle changes in yeast and fermentation shape flavor long before aging begins. 

“One of the biggest differences here is our use of a commercial yeast strain, compared to the proprietary yeast in last year’s release,” Blair said. “Our house yeast tends to bring out dark, fruity notes, while this strain lets the rye grain shine with bold, spicy clarity. It’s all about exploring how even small changes — like switching up the yeast — can create a whole new experience.” 

With its grain-driven character and high proof, the Unaged Rye Bourbon White Dog delivers what the distillers call a taste of Texas in its most unvarnished form. 

About 1,350 bottles will be available exclusively at Whiskey Ranch on Aug. 23 for $39.99 each in 375ml format, limited to eight bottles per customer in a 30-day period.
