Just in time for National Tavern-Style Pizza Day on Wednesday, a local deep-dish institution known for its stuffed crust pies is adding a crispy, square-cut pizza to their menu.

Starting November 22, the Giordano’s menu will feature tavern-style pizza for the first time.

“Chicago is a city that takes its pizza seriously, and we’re fortunate to have two distinct styles: deep-dish and tavern-style,” said Nick Scarpino, CEO at Giordano’s. “Over the past 50 years, our deep-dish has become a symbol of Chicago around the world. Now, we’re thrilled to add our incredible tavern-style pizza that will surely become just as famous.”

Scarpino also said the crunch from the tavern-style pizza will become “just as iconic as the cheese pull from our stuffed deep-dish pizza.”

The Giordano’s proprietary Wisconsin mozzarella blend is folded into the dough, producing a light and flaky crust, according to the company. The technique is inspired by how croissants are made.

Their tavern-style pizza will be available in a variety of classic and specialty combinations and offered for dine-in, carryout and delivery.
