Opened in early November, Seed Library is a Nomad outpost of a London bar with the same name. It’s the latest in the Lyan group of bars from owner and operator Ryan Chetiyawardana — who also goes by Mr. Lyan. He’s known for experimental techniques like microwaving Manhattans and fermenting wine at home. As expected, Chetiyawardana’s latest spot is a showcase for cutting-edge, lablike techniques and classic cocktails turned on their head. The bar is not for everyone, but even if you aren’t a cocktail nerd, you’ll appreciate the soft glow of the space, the creative cocktails, and the accessible menu.
The bar is tucked (a bit awkwardly) in the basement of the Hotel Park Ave, a little less glitzy New York speakeasy and more “is this the right door?” But once inside, it’s glowing with table lamps at just the right light level, with lounge-style seats and a smart arrangement of nooks and corners that make each table feel cozy and private. A thoughtful touch: The bathroom soap comes from Brooklyn-based fragrance company D.S. & Durga, a nod to New York at the newly transatlantic bar.
For a dessert drink, consider the Koji Hardshake, a lightly savory mix of whiskey, miso, koji, and cream. It’s garnished with a toasty jumbo marshmallow.
