The Michelin-starred Copenhagen restaurant will pop up in L.A. from March 11 to June 26, with reservations opening Jan. 26
Renowned restaurant Noma just announced its 16-week residency in Silver Lake. From March 11 through June 26, a meal at this world-famous establishment will cost guests a hefty $1,500 — if they can secure a table, that is.
The menu, according to a release, will remain quintessentially Noma while being completely new; utilizing L.A. ingredients and drawing from the diversity of this Southern Californian landscape.
Noma chef Rene Redzepi explains: “To bring this menu to life, we are exploring everything within a 300-mile radius of L.A., going into unexpected places, trying things we’ve never tasted before. For the first time ever, we are building our test kitchen pantry completely from scratch with hundreds of flavors developed on the ground.”

The three-Michelin-starred restaurant based in Copenhagen, Denmark stated that they will run four days of the week: evenings from Tuesday through Friday, as well as middays on Wednesdays and Fridays. Only 42 guests will be accommodated per seating during this residency’s 16-week run, making this experience even harder to secure.
The exact location of this L.A. venue will be kept secret too, with the Silver Lake venue’s address to be provided to guests who have a confirmed booking.
Bookings will be released to newsletter subscribers on Jan. 26 at 9 a.m. PST, with a $1,500 package that includes the full menu and beverage pairing, as well as the hospitality fee and tax.
Chef Redzepi told the L.A. Times that a main reason for this steep price is the cost associated with bringing 130 people to Los Angeles from Copenhagen. From housing and transportation to providing schooling for the Noma staffs’ children, bringing this 16-week residency to L.A. is not a small feat.

Separate from this exclusive dining experience, Noma will also be opening a shop where Angelenos can purchase specialty Noma products and curated flavors: the Noma Projects Shop in Silver Lake.
And through Noma L.A. Industry Table, Noma will be offering young hospitality or restaurant industry professionals the opportunity to attend Noma L.A. at no charge. Along with other applicants, selected young professionals will be given the opportunity to connect with other emerging hospitality leaders over this residency’s full menu and beverage package.

Evidently, community partnership, mentorship and workforce-development is something Noma strives to foster during this residency as well, with collaborations lined up with MAD, chef Redzepi’s nonprofit food forum, and the nonprofit organization Culinary Careers Program (C•CAP).
