LAS VEGAS (KSNV) — Ai Pazzi, the latest culinary venture from “Top Chef” alum Chef Fabio Viviani, celebrated its grand opening Saturday night at JW Marriott Las Vegas The Resort At Summerlin and Rampart Casino.

The event featured a ceremonial pasta “ribbon” cutting and a free public dining experience.

The restaurant, which will soon be joined by ai Pazzi Pizza and Pearls Oyster Bar in September, marks a new chapter in the partnership between JW Marriott Las Vegas, Rampart Casino, and Fabio Viviani Hospitality. Ai Pazzi showcases Chef Fabio’s expertise in elevating traditional Italian comfort food into sophisticated, high-end cuisine.

The grand opening event was attended by Chef Fabio Viviani, Michelle McHugh, Vice President and General Manager of JW Marriott Las Vegas The Resort At Summerlin and Rampart Casino, and members of the ai Pazzi and JW Marriott Las Vegas culinary teams.

The celebration highlighted the restaurant’s refined atmosphere and menu, featuring handmade pasta, fresh seafood, indulgent entrées, decadent desserts, and handcrafted cocktails.
