A new sandwich franchise will soon give the Hill Country something to bawk about. Atlanta-based Chicken Salad Chick will open its first Boerne location at 34702 I-10 W on May 20.

Auburn, Alabama, mom Stacy Brown started the fast-casual chain as a cottage operation, supplying friends and local businesses out of her home. Her late husband, Kevin Brown, helped her launch a small takeout cafe in 2008, which soon blossomed into a nationwide franchise with more than 330 locations in 22 states.

The restaurant first set its sights on the San Antonio area in 2021, signing an eight-unit deal with local franchisee OberRoc LLC. Since then, the company has opened three Alamo City outposts and a unit in New Braunfels.

Chicken Salad Chick makes no bones about its menu, offering its signature dish in scoops like lemon basil, dill pickle, bacon ranch, or the Fruity Fran spiked with apples, grapes, and pineapple. (We think we’d be besties.)

If poultry ruffles guests’ feathers, it also serves broccoli salads, pimento cheese, and soups like chicken tortilla or loaded potato. Desserts stay in the Southern lane too, with decadent confections like a chocolate rice cereal bar and red velvet cake.

As with all Chicken Salad Chick openings, the Boerne outpost will debut with some Southern hospitality. The first 100 guests in line at 10 am on May 20 will receive free chicken salad for a year (some restrictions apply), followed by three days of complimentary swag. The restaurant will also be raising funds for Christus Children’s Hospital.

Following the May 20 grand opening, Chicken Salad Chick will be open Monday through Saturday, 10 am-8 pm.
