The restaurant was started by three pitmasters from Goldee’s Barbecue, the Fort Worth joint that’s been called the best barbecue spot in the state by Texas Monthly. Ribbee’s was designed as a Goldee’s offshoot that focused almost exclusively on ribs — an uncommon barbecue business model in beefy Texas.
Ribbee’s opened in 2024. The founders borrowed an idea from Raising Cane’s and kept the menu small, with fries and a roll as limited options for sides. Ribs remain the focus, but Ribbee’s sells beef back and chicken combos, too.
White is the sole owner of Ribbee’s today, and he maintains that a ribs-focused restaurant in Texas can work.
For now, White will turn his focus to a new restaurant he’s opening with pitmaster Chuck Charnichart, who owns Barbs B Q in Lockhart. The two are working on a barbecue joint in New York City called Kirbee’s. (You’re sensing a naming pattern here.)
According to White, Kirbee’s will serve Texas barbecue in Brooklyn. In addition to smoked meat, Charnichart will sell green spaghetti and White will do cheesy grits.
“You can get barbecue my way or Chuck’s way,” White said of the New York restaurant.
As for Ribbee’s, White said he wanted the restaurant near Interstate 35W to stay open. The building has a new owner, with plans for a different restaurant, he said.
“I couldn’t convince them to let us stay.”
White posted to Instagram that his team is “actively looking for a new home for Ribbee’s.”
Ribbee’s is at 923 E. Seminary Drive, Fort Worth. Open Wednesday through Sunday, 11 a.m. to 6 p.m., until June 21, 2026.
