Ramen Tatsu-ya is different from other ramen shops because the preparation is authentic to how ramen is prepared in Japan, Coerver said.

It began when the founder, Tatsu Aikawa, who was born and raised in Tokyo before moving with his family to Austin when he was a child.

“His dream was really to bring authentic Tokyo-style ramen to the States,” Coerver said. “When we opened the first location in Austin several years back, we believed we were one of the first to actually be doing it in a style authentic to the Tokyo region and how they produce and serve ramen.”
