UNIVERSITY CITY (WPVI) — You can find Shon Emmanuel, aka Chef Sunflower, in the southwest corner of 30th Street station, fittingly stationed under a sunflower-filled billboard for Maryland Tourism.

Chef Sunflower makes everything from a vegan turkey hoagie to a char-seared bacon cheeseburger. There’s a tuna salad sandwich and a chicken salad wrap.

Her sausage, egg and cheese breakfast sandwich is the best seller.

She makes a Philly cheesesteak, with scratch-made buffalo chicken and cheese and a crab cake sandwich made from hearts of palm.

Growing up, Chef Sunflower worked summers in her late grandfather’s restaurant, Supreme Oasis, which started in Baltimore, Maryland.

When her family moved the restaurant to 44th Street and Lancaster Avenue in West Philadelphia, 6 years ago, Shon was working as a paramedic in the city.

She decided to join the family business.

And, as people started asking for healthier options during the pandemic, Shon started experimenting with vegan versions of the restaurants favorite sandwiches.

She’s now launched her own venture, called BTW, It’s Vegan.

She also makes nut-free sweet treats-cookies, cupcakes and cheesecakes along with her signature, Shonee, which is a veganized spin on Little Debbie’s oatmeal cream pie.
