One of the most beloved bakery chains in Houston is coming to San Antonio. El Bolillo Bakery, a Space City institution since 1998, will open at 9440 W Interstate 10 in late 2026, bringing more than 150 varieties of pan dulce baked fresh each day.
The business began as a small neighborhood bakery, but has since blossomed to five locations in the Houston area. Recently called the “Buc-ee’s of panaderías” by Texas Highways magazine, it is known for its gobsmacking selection of treats and colorful storefronts reminiscent of the vibrant buildings of San Miguel de Allende, Mexico.

In addition to pan dulce like orejas, campechanas, and canastas, El Bolillo is known for its tres leches cakes, made in innovative flavors like mango, mocha, and Oreo. The restaurant also offers custom cakes with personalized designs.
Although the sweet breads are El Bolillo’s main attraction, it also serves savory items like tortillas and kolaches, tamales, and other desserts ranging from flan to pingüinos, the bakery’s take on Hostess Cupcakes.
“At El Bolillo Bakery, we believe in inclusivity and accessibility,” says Andrew Miller, Chief Operations Officer, in a statement. “Whether you’re celebrating a special occasion with one of our custom cakes or simply stopping by for a warm bolillo, there’s something here for everyone. Our mission is to create a space where all are welcome, regardless of background or budget.”

The mini-chain’s expansion was teased as far back as January 2023, when Houston firm Garza Management Group took over operations for restaurant group Common Bond. Although reps mentioned Austin or Dallas as possible new cities for growth, San Antonio was not mentioned.
If the address seems familiar, it’s probably because of the building’s unsavory past. For 30 years, it hosted AllStars Gentlemen’s Sports Club before it shuttered in February 2024. Needless to say, El Bolillo will be much more family-friendly.
