Jacksonville’s quirkiest, most fermentation-obsessed destination is getting even bigger.

The Pickle Factory, a specialty shop and community hub on St. Augustine Road, recently unveiled a 1,500-square-foot expansion.

The brick-and-mortar destination for Olive My Pickle, a Jacksonville-based fermented foods brand founded by Charlotte and Shai Tzabari.

Before opening the store in 2024, Olive My Pickle sold its products through farmers’ markets and via e-commerce.

The Pickle Factory, at 5913 St. Augustine Road, brought the fermented foods brand experience to life in a physical space with many goals: part specialty grocery, part novelty shop, part “pickle museum” and part community gathering place.

When it opened, the storefront reportedly measured around 2,000 square feet and featured thousands of products from pickled vegetables to novelty gifts and themed apparel.

Now, bolstered by strong demand and customer excitement, the owners are scaling up by adding 1,500 square feet in a major move that will nearly double the current retail footprint.

With the extra room, the Pickle Factory can stock more of its own line and more vinegar-based pickles from other producers. Novelty items — from pickle-shaped hair clips to funky socks — will also gain more shelf space.

This also will add more room for strolling, browsing and discovering. The expansion offers flexibility for themed displays, interactive areas, including tasting stations or mini workshops, and photo opportunities with pickle murals or the neon signage.

The extra space should ease congestion during popular times, such as weekends and events, too. The shop also has the capacity to host more workshops and pop-ups without displacing core retail operations.

The Pickle Factory has become an attraction not just for locals but also road-trippers and pickle enthusiasts thank to its billboard presence along highway routes.

Beyond sales, the expansion signals a deeper commitment to educating customers about fermentation, gut health and supporting a “pickle culture” lifestyle — turning the store into more of a destination than just a shop.

Ultimately, the expansion’s success will rest on whether the extra space leads to proportional increases in foot traffic, sales per square foot and customer satisfaction.

This growth isn’t just about more room, though.

The Pickle Factory’s success story adds a unique, local flavor to Jacksonville’s retail and food scene.
