Over the past few years, San Diego has gone from a dearth to an abundance of options, from dense and chewy New York-style to California sourdough bagels, with more on the way (<a href=\"https:\/\/sandiegomagazine.com\/food-drink\/new-wave-bagel-shop-leucadia\/\" target=\"_blank\" rel=\"noopener\">New Wave<\/a> in Leucadia, <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/marigold-bagels-shop-opening-north-park\/\" target=\"_blank\" rel=\"noopener\">Marigold Bagels<\/a> in North Park, <a href=\"https:\/\/www.instagram.com\/p\/DMsuQyqOLZM\/?hl=en\" target=\"_blank\" rel=\"noreferrer noopener\">PopUp<\/a> in La Jolla).\u00a0<\/p>\n<p>Never one to miss a party\u2014Pacific Beach is now getting its own bagel spot this month, when <a href=\"https:\/\/www.instagram.com\/mission.bagel\/\" target=\"_blank\" rel=\"noreferrer noopener\">Mission Bagel<\/a> opens its first brick-and-mortar at 1344 Garnet Avenue (in the former The Friendly location). Mission\u2019s Gabe Rubin came to San Diego from Cincinnati, Ohio 10 years ago, but didn\u2019t really start testing his bagel acumen until the pandemic gave him (and pretty much everyone in the world) the urge to hit the kitchen.\u00a0<\/p>\n<p>\u201cI just really needed a good bagel,\u201d he laughs. With his engineering background, it became an ongoing development process to chase absolute bagel perfection. He nailed it pretty fast, leading him to launch a delivery and catering service during Covid and was quickly overwhelmed at its success. So naturally, he bought a <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/10-must-try-food-trucks-in-san-diego\/\" target=\"_blank\" rel=\"noopener\">food truck<\/a> and hired reinforcements\u2014his sister and her husband Hannah and Dante Brown.<\/p>\n<p>\u201cI called them and said, \u2018You want to move out here and help me do this?\u2019\u201d he says of his partners. \u201cTwo weeks later, they packed up and moved out to San Diego to help me get this thing off the ground and run it.\u201d<\/p>\n<p>So what is it specifically that makes Mission Bagel\u2019s bagels so special? \u201cYou know, I ask myself this question all the time,\u201d Rubin laughs.\u00a0<\/p>\n<p>His recipe is New York-inspired, but not a direct copy of the style to better satisfy Californians\u2019 palates. (Each one still uses a fermented dough, but not sourdough, and they\u2019re slightly smaller than their bulging East Coast counterparts.) \u201cIt\u2019s like a yeasty flavor, and then because we boil and bake, and the boiling is done in slightly basic and sweetened water, what you get is a snap in the crust. There\u2019s a snap and a chew that you get from a New York bagel you don\u2019t get from most bagels that you get out here.\u201d Mission Bagel\u2019s everything bagel is its best seller \u201cby far,\u201d he says.\u00a0<\/p>\n<p>The storefront will allow them to expand its volume as well, making more fan favorites like poppy bagels, fresh cream cheese flavors like scallion and strawberry, and other kosher items like egg salad based on his mother\u2019s recipe. \u201cIt took a while to get people to sample the egg salad, because most of the time when you eat an egg salad, it\u2019s very mediocre\u2026 [but] I have to make two or three batches all the time now, because it just flies off of our menu,\u201d he explains.\u00a0<\/p>\n<p>Rubin says he plans to keep slinging bagels out of the food truck at 1608 Grand Avenue even after the brick-and-mortar opens. Depending on how business goes with two locations relatively close to one another, he\u2019s open to moving it, but he plans to stick close to Pacific Beach regardless. \u201cWe really want to support the community that we live in,\u201d he says. Soon, it\u2019ll be San Diego\u2019s turn to post viral videos of <a href=\"https:\/\/www.instagram.com\/p\/DMgHq1Wy1Gf\/\" target=\"_blank\" rel=\"noopener\">ooey-gooey egg sandwiches<\/a> overflowing out of their brioche buns. A representative for Egg Tuck said they hope to eventually open three total locations in San Diego, starting with a flagship store in Little Italy by summer 2026. Head to its Spring Valley spot on August 2, or La Jolla on August 9 for the fiery fun.<\/li>\n<li><a href=\"https:\/\/sandiegomagazine.com\/food-drink\/shorebird-restaurant-opening-seaport-village\/\" target=\"_blank\" rel=\"noopener\">Shorebird<\/a> is open! The restaurant has locations in Newport Beach, Palm Desert, and Sedona in Arizona, but the Seaport Village spot took an especially long time to cut through all the red tape of construction at the waterfront. Finally, though, its doors and reservations are now <a href=\"https:\/\/shorebirdrestaurant.com\/san-diego\" target=\"_blank\" rel=\"noreferrer noopener\">open<\/a> for all your <a href=\"https:\/\/shorebirdrestaurant.com\/menu\/raw-bar-san-diego\" target=\"_blank\" rel=\"noopener\">raw bar<\/a> needs.<\/li>\n<li>Ask any chef what\u2019s so great about San Diego and there\u2019s a 99.9 percent chance they\u2019ll say \u201cthe quality and quantity of our local produce.\u201d Now, it\u2019s a little easier for consumers to take advantage of that bounty. <a href=\"https:\/\/navoremarket.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Navore Market<\/a> is a new San Diego\u2013based online marketplace that connects consumers to local farmers (like Hukama Produce) to avoid the cost and hassle of a middleman. I haven\u2019t tried it yet, but I\u2019m eager to see what sort of positive effects this may have.
