(Photo by Drew Sitton\/Times of San Diego)<\/p>\n<p><a href=\"https:\/\/www.portofsandiego.org\" target=\"_blank\" rel=\"noopener\">Port of San Diego<\/a> and Seaport Village officials joined <a href=\"https:\/\/www.thewildthymecompany.com\" target=\"_blank\" rel=\"noopener\">Orange County-based Wild Thyme<\/a> restaurant group founder Heinrich Stasiuk and director of culinary development Jay Bogsinske for the ceremony.<\/p>\n<p>\u201cI\u2019ve been waiting for this very special moment to finally say, \u2018Welcome to Shorebird,\u2019\u201d Stasiuk said.<\/p>\n<p>Danielle Moore, chair at the port, also spoke. \u201cJust as a shore bird returns to the places that sustain it, may we keep returning here to share meals, make memories and watch the tides change together,\u201d she said.<\/p>\n<p>Franchise first opened in 2020<\/p>\n<p>This is the fourth location of Shorebird, which opened in Newport in 2020 and expanded to Sedona, Ariz., and Palm Desert.\u00a0<\/p>\n<p>Beyond seafood and grilled meats, the restaurant is known for making everything from sauce to bread from scratch daily. <\/p>\n<p><a href=\"https:\/\/i0.wp.com\/timesofsandiego.com\/wp-content\/uploads\/2025\/08\/watermelon-mojito-scaled.jpg?ssl=1\" target=\"_blank\" rel=\"noopener\"><img loading=\"lazy\" data-recalc-dims=\"1\" decoding=\"async\" width=\"780\" height=\"520\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/08\/watermelon-mojito.jpg\" alt=\"Fresh watermelon and more.\" class=\"wp-image-338473\"  \/><\/a>Newport restaurant Shorebird boasts a scratch kitchen with no canned or frozen foods. (Photo by Drew Sitton\/Times of San Diego)<\/p>\n<p>\u201cChef Jay can tell you there\u2019s no cans. There\u2019s no frozen product in this kitchen. I\u2019ve seen him throw a can before, so we decided to just scratch the cans,\u201d Stasiuk joked at Wednesday\u2019s ribbon cutting.<\/p>\n<p>The restaurant signed a 10-year lease with the Port of San Diego in 2021 with plans to open the following year. Stasiuk was drawn to the location of the former Pier Cafe, which served as the face of Seaport Village for decades.<\/p>\n<p>He credited the port for working to get the project finished.<\/p>\n<p>Moore acknowledged the perseverance and investment of Stasiuk\u2019s team. She noted the project took coordination from the <a href=\"https:\/\/www.coastal.ca.gov\" target=\"_blank\" rel=\"noopener\">Coastal Commission<\/a>, <a href=\"https:\/\/www.sandiego.gov\" target=\"_blank\" rel=\"noopener\">city of San Diego<\/a> and San Diego County health agencies.<\/p>\n<p>\u201cWe want this to be a thriving space, so our effort is to make sure that these businesses open very quickly. That way they can start earning money and we\u2019ll see a percentage of that,\u201d Moore said. \u201cIf there\u2019s a delay, it\u2019s usually something that\u2019s beyond our control.\u201d<\/p>\n<p>Shorebird was expected to open in 2022 after $3 million in renovations. The delayed project went over budget, but Stasiuk remained committed to the indoor-outdoor restaurant, which seats 110.<\/p>\n<p>\u201cWe\u2019re looking to a long relationship, to be here for a long time at the Seaport Village,\u201d Stasiuk said. <\/p>\n<p><a href=\"https:\/\/i0.wp.com\/timesofsandiego.com\/wp-content\/uploads\/2025\/08\/shorebird-over-water-scaled.jpg?ssl=1\" target=\"_blank\" rel=\"noopener\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"780\" height=\"520\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/08\/shorebird-over-water.jpg\" alt=\"New Seaport Village eatery.\" class=\"wp-image-338469\"  \/><\/a>Structural issues, but mostly permits, delayed the opening of Shorebird, which takes over for Pier Cafe above the water at Seaport Village. (Photo by Drew Sitton\/Times of San Diego)<\/p>\n<p>Some structural issues in the wooden building elevated above the water required additional construction, but the lagging permitting process was largely to blame for delays.<\/p>\n<p>\u201cSeaport Village is over 40 years old, and so the structures, they\u2019re older. And when these new operators are coming in, and they\u2019re taking down walls, they\u2019re finding things that tend to delay the project,\u201d said Alexa Paulus, a department manager in real estate at the port. \u201cBut it really comes down to permitting.<\/p>\n<p>\u201cThat\u2019s really a big reason why some of these projects take a lot longer to get done. But we do get them done, which is great. It just takes a little longer.\u201d<\/p>\n<p>Across from Shorebird, construction is still underway at <a href=\"https:\/\/www.gladstones.com\" target=\"_blank\" rel=\"noopener\">Gladstones<\/a>, the historic Malibu beachside restaurant,\u00a0which signed a lease at the same time as Shorebird in 2021.<\/p>\n<p>At Seaport\u2019s other anchor location, sports bar <a href=\"https:\/\/corkandbatter.com\/news\/los-angeles-based-cork--batter-sports-bar-to-join-san-diegos-seaport-village\" target=\"_blank\" rel=\"noopener\">Cork &amp; Batter<\/a> will take over space in the lighthouse later this year after a venture from Sam the Cooking Guy terminated its lease in 2022 before it could open.<\/p>\n<p>Throughout the rest of the village, there have been several openings since the port took control in 2018.<\/p>\n<p><a href=\"https:\/\/www.zytoun.com\/\" target=\"_blank\" rel=\"noopener\">Zytoun Gourmet Mediterranean<\/a>, Raihan Cafe and <a href=\"https:\/\/www.seaportvillage.com\/miss-match\" target=\"_blank\" rel=\"noopener\">miss match<\/a>, a fashion boutique, are among recent entries.<\/p>\n<p>Moore touted the increased gross revenue at Seaport Village from $45 million to $68 million since the port\u2019s $11 million revitalization effort began.
