The Fort Worth distillery has released TX Whiskey Unaged Rye Bourbon White Dog, its 14th experimental expression, a bold and unfiltered look at what rye bourbon tastes like before the oak has its say.\u00a0<\/p>\n<p>Crafted from a mash bill of corn, rye, and malted barley, and bottled at 120 proof, the White Dog leans into the raw interplay of grain, yeast, and distillation. The aroma opens with sassafras, warm clove, and fresh corn husk, accented by ripe banana. The palate follows with licorice and allspice before shifting into malty sweetness and finishing with spice and fruit.\u00a0<\/p>\n<p>\u201cThis release builds on the foundation we laid with last year\u2019s Unaged Wheated Bourbon White Dog,\u201d said Craig Blair, Head Blender at TX Whiskey. \u201cBut this time, we\u2019re telling a different story, starting with a rye bourbon mash bill and a commercial yeast strain. That shift changes everything: from the grain-forward nose to the drier, spicier palate.\u201d\u00a0<\/p>\n<p>White Dog serves as both spirit and study, showing how subtle changes in yeast and fermentation shape flavor long before aging begins.\u00a0<\/p>\n<p>\u201cOne of the biggest differences here is our use of a commercial yeast strain, compared to the proprietary yeast in last year\u2019s release,\u201d Blair said. \u201cOur house yeast tends to bring out dark, fruity notes, while this strain lets the rye grain shine with bold, spicy clarity.
