Some\u00a0brands\u00a0say it\u2019s because they have improved the nutritional properties of the food. They use labels like \u201cenriched\u201d if they have added \u201cgood\u201d vitamins and minerals or \u201cdiet\u201d if they have removed \u201cbad\u201d sugar and fat. These are the traditional, nutrition-based ways to be healthy.<\/p>\n<p>Other food products claim to be healthy \u201cby nature\u201d. These brands claim they have preserved the food&#8217;s natural characteristics by either not adding anything\u00a0\u201cbad\u201d (these includes claims such as \u201cclean\u201d or \u201cfree from\u201d additives or hormones) or by not removing anything\u00a0\u201cgood\u201d (these includes claims such as \u201cwhole\u201d or \u201corganic\u201d).\u00a0<\/p>\n<p>\u201cConsumers are less and less interested in the nutritional approach,\u201d says Chandon.\u00a0Rather, they now favour foods that are healthy by nature.\u00a0<\/p>\n<p>In a\u00a0<a href=\"https:\/\/knowledge.insead.edu\/responsibility\/green-views-healthier-diets\" rel=\"nofollow noopener\" target=\"_blank\"><strong>series of studies<\/strong><\/a> with his co-author\u00a0<a href=\"https:\/\/www.smu.edu\/cox\/academics\/faculty\/maria-langlois\" rel=\"nofollow noopener\" target=\"_blank\"><strong>Maria Langlois<\/strong><\/a>, he found that nature itself can nudge people towards better choices. When participants walked in a park rather than\u00a0through\u00a0city streets, they picked fruit over unhealthy snacks. Even just looking at pictures of green landscapes had a similar effect. \u201cA natural view makes people more willing to trade off taste and diet for natural healthy food,\u201d he says.<\/p>\n<p>He also points to a disconnect between how brands talk about health and what consumers actually want. For instance, his research with\u00a0<a href=\"https:\/\/www.rsm.nl\/people\/romain-cadario1\/\" rel=\"nofollow noopener\" target=\"_blank\"><strong>Romain Cadario<\/strong><\/a> shows that in France, labels on cereal packages align with local preferences.
