Washington D.C\u2019s <a class=\"editor-rtfLink\" href=\"https:\/\/www.salamanderdc.com\/dining\/dogon\/\" target=\"_blank\" rel=\"noopener nofollow\">D\u014dgon by Kwame Onwuachi<\/a> traces his ancestral ties to the West African D\u014dgon tribe, while at <a class=\"editor-rtfLink\" href=\"https:\/\/www.laslapmia.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Las&#8217; Lap<\/a>, his first foray into South Beach, <a class=\"editor-rtfLink\" href=\"https:\/\/www.timeout.com\/miami\/news\/chef-kwame-onwuachis-miami-debut-is-a-love-letter-to-the-caribbean-071625\" target=\"_blank\" rel=\"noopener\">he nods to his Trinidadian and Caribbean roots<\/a>. At Tatiana,<a class=\"editor-rtfLink\" href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/100-best-new-york-restaurants\" target=\"_blank\" rel=\"noopener\"> one of the best restaurants in New York right now<\/a>, he shows his endearment for the concrete city that raised him. At Patty Palace, Onwuachi is continuing\u00a0to show love for all things NYC, honing in on his favorite childhood snack: the Jamaican patty. <\/p>\n<p>So, why the humble patty? Before the buzz of Top Chef, awards and wholly successful <a class=\"editor-rtfLink\" href=\"https:\/\/www.salamanderhotels.com\/familyreunion\/\" target=\"_blank\" rel=\"noopener nofollow\">Family Reunion<\/a>,\u00a0Onwuachi was just another kid growing up in the Bronx. Like many of his classmates, his after-school activities revolved around one thing: grabbing a patty.\u00a0<\/p>\n<p>\u201cIt was a curried chicken patty with coco bread and a\u00a0Nutrament as a drink,\u201d said Onwuachi of his go-to order back in the day, citing that his favorite shop was at <a class=\"editor-rtfLink\" href=\"https:\/\/www.yelp.com\/biz\/jackies-west-indian-bakery-bronx\" target=\"_blank\" rel=\"noopener nofollow\">Jackie&#8217;s West Indian Bakery<\/a>. While he has since left the Nutrament behind, his love of patties\u00a0remains and served as a jumping-off point\u00a0for\u00a0another venture. Looking to tap back into his fast-casual arm\u2014Onwuachi previously operated Philly Wing Fry and Gorsha, both in Washington D.C.\u2014he teased a sneak preview of his coming patty shack at the Black and brown entrepreneurial conference, <a class=\"editor-rtfLink\" href=\"https:\/\/theccnyc.com\/culturecon\" target=\"_blank\" rel=\"noopener nofollow\">CultureCon<\/a>. Naturally,\u00a0patties were the first to come to mind when\u00a0<a class=\"editor-rtfLink\" href=\"https:\/\/www.timeout.com\/newyork\/sports-and-fitness\/citi-field\" target=\"_blank\" rel=\"noopener\">Citi Field<\/a>\u00a0approached him to create a fast-casual concept.<\/p>\n<p>\u201cI was approached by the Mets to put a concept in Citi Field,\u201d said Onwuachi. \u201cWe got the concept together in a month and have been hitting the ground running ever since!\u201d\u00a0<\/p>\n<p><img decoding=\"async\" id=\"d88f572c-05ac-183a-fe99-770ffccf9d84\" class=\"photo lazy inline\" loading=\"lazy\" data-component=\"lazy-embed\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/09\/1756784784_64_image.webp.webp\" alt=\"A Jamaican patty sandwich from Patty Palace, served inside soft white bread and topped with shredded cabbage, red sauce, and green crema drizzle.\" data-caption=\"| Patty Palace\" data-credit=\"Photograph: Courtesy of Time Out Union Square\" data-width-class=\"\" data-image-id=\"106309922\"\/>&#13;<br \/>\nPhotograph: Courtesy of Time Out Union Square| Patty Palace&#13;<\/p>\n<p>Named Chef Kwame\u2019s Patty Palace, Onwuachi sells a single flavor, which happens to be his go-to favorite: the curried chicken. Making everything from scratch, the chicken is seasoned with a blend of Caribbean spices\u2014green seasoning and curry powder, accompanied by a mix of\u00a0ginger, garlic and onions. Encased in a classic turmeric-tinged\u00a0crust, the patties are then dressed with a ginger-cabbage slaw and two sauces: jerk barbecue and a green seasoned aioli. And just like how he ate it in the old days, it is all encased in coco bread. <\/p>\n<p>But\u00a0seeing as how not all could sink their teeth in, as only those with\u00a0access to the stadium\u2019s Hudson Whiskey NY Club and Clover Club could enjoy them,\u00a0Onwuachi decided to bring the patty to the people, parking a truck outside his award-winning restaurant in Lincoln Center. Seemingly working his way down the length of Manhattan, Patty Palace will soon find a home at Time Out Union Square.\u00a0His latest installment of Patty Palace will also introduce new menu items, adding simmering beef and jerk mushrooms to the mix.
