Decades ago, he worked on cruise ships overseas with fellow Italian restaurateur Alberto Lombardi, who now owns Dallas restaurants Toulouse, Taverna, Bistro 31 and many others. Banchetti was assistant ma\u00eetre d\u2019 at The Mansion and ma\u00eetre d\u2019at the Pyramid Room at the Fairmont. He opened his own restaurant after what he describes as a \u201cmisunderstanding\u201d: staffers were asked to learn a new computer system at the Fairmont, and Banchetti thought he heard his manager say she wouldn\u2019t help them learn it \u2014 though she\u2019d said the opposite.<\/p>\n<p class=\"body-text-paragraph\">\u201cI said, \u2018I can be my own boss so no one can tell me what to do,\u2019\u201d Banchetti recalls. So he got a lease near Knox Street and opened a bistro with his name on it.<\/p>\n<p class=\"body-text-paragraph\">Over nearly 40 years, the recipes for Adelmo\u2019s osso buco and lasagna have remained the same, the owner said. The old-school service and warm family atmosphere are still intact, too.<\/p>\n<p class=\"body-text-paragraph\">\u201cBut the habits of the people have changed a little bit,\u201d Banchetti said. So has his attitude toward dishes that seem like Americanized versions of the Italian food he grew up eating.<\/p>\n<p class=\"body-text-paragraph\">Like garlic bread.<\/p>\n<p class=\"body-text-paragraph\">\u201cI said, \u2018Why would I have to put on the table something that stinks like garlic bread?\u2019\u201d he said.<\/p>\n<p class=\"body-text-paragraph\">\u201cBut now I say, \u2018You want it? [Will] you pay for it? You get it.\u2019\u201d<\/p>\n<p class=\"body-text-paragraph\">Customers also requested meatballs (\u201ca great dish, but an immigrant dish\u201d) and fettuccine alfredo (\u201ca disgrace\u201d). He added both, plus gluten-free pasta.<\/p>\n<p class=\"body-text-paragraph\">The fettuccine alfredo, specifically, \u201csells like crazy,\u201d he said.<\/p>\n<p class=\"body-text-paragraph\">Diners rarely say \u201cno\u201d to dessert: cannoli, tiramisu, flourless chocolate cake and cr\u00e8me br\u00fbl\u00e9e. Customers celebrating a birthday or an anniversary are treated to bread pudding with brandy caramel sauce.<\/p>\n<p class=\"body-text-paragraph\">The Banchettis haven\u2019t found a new place to move Adelmo\u2019s yet. They\u2019re looking in University Park, Highland Park and near Love Field.<\/p>\n<p class=\"body-text-paragraph\">\u201cWe are blessed in many ways,\u201d Banchetti said as he considers his last few months near Devonshire in Dallas. \u201cThe only thing is, we hope to find a place not too far, not too big, where we can be active in making people happy.\u201d<\/p>\n<p class=\"body-text-paragraph\">Adelmo\u2019s Ristorante is at 5450 W. Lovers Lane, Dallas. Closed Mondays.
