SAN ANTONIO<\/strong> \u2013 After inspectors found roaches in a cooler and on food inside a San Antonio restaurant, the owner invited KSAT Behind the Kitchen Door.<\/p>\n

Behind the Kitchen Door<\/a> is a series where KSAT investigates health inspections of San Antonio restaurants.<\/p>\n

Guillermo\u2019s<\/p>\n

The pale yellow building off McCullough and St. Mary\u2019s in downtown San Antonio is home to Italian restaurant Guillermo\u2019s. <\/p>\n

During an inspection on Aug. 18, inspectors issued 13 demerits.<\/p>\n

They found dead roaches in the bar and in a prep cooler. A live roach was spotted on ham. <\/p>\n

\u201cWe have exterminators,\u201d said the owner, Guillermo. \u201cWe get biannual, I mean, bimonthly treatment, and we\u2019re happy to show you around.\u201d<\/p>\n

That\u2019s exactly what he did, inviting KSAT\u2019s cameras into the kitchen. <\/p>\n

\u201cGuys, how\u2019s the roach problem?\u201d Guillermo asked his employees. \u201cIs it under control?\u201d<\/p>\n

\u201cYou\u2019re the first restaurant owner that we\u2019ve had that\u2019s actually taken us behind the kitchen (door),\u201d KSAT said. \u201cWhy do you want customers to see this?\u201d<\/p>\n

\u201cBecause we\u2019re, look, especially in today\u2019s climate, we need to be as transparent as possible,\u201d Guillermo said.<\/p>\n

He said keeping pests out of the decades-old building is a challenge. <\/p>\n

Guillermo took KSAT to see the ice machine, where inspectors found black and red residue. <\/p>\n

\u201cThere was some mold in here,\u201d he said. \u201cIt\u2019s a very old machine.\u201d<\/p>\n

\u201cWhat\u2019s your goal for the next time a food inspector drops by your restaurant?\u201d KSAT asked. <\/p>\n

\u201cWell, to do the exact same thing, to get better and better and better at it,\u201d Guillermo said. \u201cSo our goal is to reach 100, right?\u201d<\/p>\n

Guillermo hopes to earn that perfect score soon. Until then, he\u2019ll display the placard with a score of 84. <\/p>\n
