Mary Perez \u2014 the self-styled \u201cFort Worth Queen of Sauces\u201d \u2014 had announced the opening of <a href=\"https:\/\/fwtx.com\/eat-drink\/enchiladas-ol%C3%A9-expands-to-camp-bowie-locale\/\" target=\"_blank\" rel=\"noopener\">a third Enchiladas Ol\u00e9<\/a>, this one at 6473 Camp Bowie Boulevard, in the old Boozie\u2019s Brewery space. The Nicolas Cage mural stayed on the wall, margaritas flowed, and for a while, it felt like Perez had pulled off another\u00a0successful move.\u00a0<\/p>\n<p>But fast forward just over a year, and the dream has soured. That Camp Bowie location is now shuttered, she verified via text.\u00a0<\/p>\n<p>The culprit? Not the food \u2014 Perez\u2019s enchiladas are as reliable as ever \u2014 but the slow grind of Texas bureaucracy. On social media, Perez laid out the paper trail with equal parts frustration and heartbreak: \u201cIn 2023 we applied for our liquor license through Harris Permits, in 2024 we paid over 31k for temporary permits, in 2025 we gave away free beer and free margaritas, we cannot continue to do business at this location without a liquor license, still no license; even with our wonderful food, customers want a choice of their favorite beer, etc.\u201d\u00a0<\/p>\n<p>That gap \u2014 the missing liquor license \u2014 proved fatal. \u201cIn the past months, tables of customers get up and walk out,\u201d she wrote. \u201cToday we are moving&#8230; we just cannot continue to lose money.\u201d\u00a0<\/p>\n<p>For west-side fans, the news isn\u2019t all bad. Perez is keeping the enchiladas coming, though now as takeout only, served out of <a href=\"https:\/\/fwtx.com\/eat-drink\/holy-cues-smoked-meatloaf-and-sides-that-steal-the-show\/\" target=\"_blank\" rel=\"noopener\">Holy Cue<\/a>, her barbecue joint just down the road at 4307 Camp Bowie. She\u2019s also still offering Family Meals and catering out of both of her concepts \u2014 a stopgap solution until her next move is finalized.\u00a0<\/p>\n<p>And that move is already in motion. \u201cEnchiladas Ol\u00e9 Dine In will be back in early 2026,\u201d Perez promised. \u201cWe are negotiating a lease in a phenomenal location.\u201d\u00a0<\/p>\n<p>If there\u2019s anyone you\u2019d bet on making good on that promise, it\u2019s Perez. After all, her story has always been one of persistence. She spent 25 years working in nonprofits before turning her mother\u2019s enchilada sauces into a side hustle in 2012. A year later, she opened her first Enchiladas Ol\u00e9 on Sylvania Avenue and never looked back. The restaurant bounced from one location to another \u2014 Forest Park, North Tarrant Parkway, Camp Bowie \u2014 but the food, rooted in Perez\u2019s family recipes, never faltered.\u00a0<\/p>\n<p>\u201cAfter growing up and living in the kitchen, the last thing I ever wanted to do was this,\u201d Perez admitted in 2023. \u201cBelieve it or not, I wanted to be a writer.
