Harwood St. across from the Dallas Museum of Art, has debuted <a href=\"http:\/\/www.jwsteakhousedallas.com\" target=\"_blank\" rel=\"noopener\">JW Steakhouse<\/a>, a reimagining of its signature restaurant located on the 11th floor.<\/p>\n<p>This marks the third restaurant concept that has been at the hotel since it <a href=\"https:\/\/dallas.culturemap.com\/news\/restaurants-bars\/marriott-arts-hotel-margarets-vincent\/\" target=\"_blank\" rel=\"noopener\">opened<\/a> in 2023. The hotel opened with a gourmet-style restaurant called Margaret&#8217;s with dishes such as carbonara pasta with Iberico pork cheeks, English peas, and Texas mushrooms. After original chef Jonah Friedmann left in 2024, Margaret&#8217;s <a href=\"https:\/\/dallas.culturemap.com\/news\/restaurants-bars\/dallas-chefs\/\" target=\"_blank\" rel=\"noopener\">became<\/a> a ranch-to-table restaurant called Montage.<\/p>\n<p>Now it goes full-bore with the steakhouse energy, with a menu that combines Texas-style dry-aged steaks &#8220;with refined accents and unexpected dishes influenced by Dallas\u2019 Hispanic and East Asian communities.&#8221;<\/p>\n<p>It&#8217;ll be open all day for breakfast, lunch, dinner, and weekend brunch, along with an Overture Menu\u2014a three-course option designed for pre-performance dining.<\/p>\n<p>\u201cDallas knows steak,\u201d says Executive Chef Miguel Antonio. \u201cBut we saw room to evolve the genre. Big cuts, yes\u2014but brushed with garden herbs and butter, paired with artisanal salt flights, finished with garnishes harvested on-site.&#8221;<\/p>\n<p>Beefy menu items include a 32-ounce porterhouse, 16-ounce ribeye, and bone-in short rib seasoned with the kitchen\u2019s signature spice blend. Each is seared at 1,200 degrees in a Montague broiler for a deep crust, then finished with fresh herbs cut from the hotel\u2019s rooftop garden.<\/p>\n<p>New dishes draw from the culinary team\u2019s backgrounds and\/or the area&#8217;s cultural landscape including:<\/p>\n<ul class=\"ee-ul\">\n<li>Duck with cherry mole \u2014 adapted from the senior sous chef\u2019s family recipe \u2014 Spanish-style farrow (surely they mean farro) and summer squash stew with panela cheese<\/li>\n<li>Miso-marinated sea bass over soba noodle salad, crispy tempura, and hand-cut shiso<\/li>\n<li>Barbecue-inspired mushroom \u201cmeatloaf\u201d swaps traditional brisket for umami-rich fungi, plated with campfire bean pur\u00e9e, pickled okra and dehydrated carrot powder. YES to this.<\/li>\n<\/ul>\n<p>Behind the scenes, the team turns trimmed fat into house-rendered tallow and dries carrot peels into seasoning powder\u2014part of a broader effort to reduce waste. In 2024, the restaurant\u2019s composting program kept more than 7,000 pounds out of the landfill.<\/p>\n<p>The dining room seats 137 and retains its original brass-and-marble details.
