Thanks for the love! \ud83e\udd42 Chef Josh #lastsupper.\u201d<\/p>\n<p>A Rising Star in Kosher Fine Dining<\/p>\n<p>Bonito\u202f47 opened in June 2024 on West 47th Street\u2014Chef Kessler\u2019s bold move from Chelsea to the heart of the Theater District and Diamond District. Kessler and his team emphasized impeccable service\u2014from reservation to departure\u2014mirroring top-tier non-kosher fine\u2011dining standards.<\/p>\n<p>Challenges Behind the Scenes<\/p>\n<p>Despite critical praise and loyal fans, filling the dining room consistently proved challenging. Even with strategic location and premium offerings, the economics of high-end kosher fine dining\u2014especially with perishable imports and substantial labor costs\u2014can be unforgiving. Last night\u2019s note from Chef Josh highlights the candid reality: seating had not reached a sustainable volume.<\/p>\n<p>Legacy &amp; Takeaway<\/p>\n<p>While Bonito\u202f47\u2019s tenure was brief, its impact endures. It elevated expectations for kosher dining in Midtown, blending luxe ambiance, artful cuisine, and innovative service. Chef Kessler carved new territory\u2014especially with the kosher steak omakase, an unheard-of concept before Bonito\u202f47.<\/p>\n<p>As the doors close, diners and the kosher community reflect on a restaurant that dared to dream big.
