That includes a beer tip salad served over spinach, sundried tomato, goat cheese and balsamic dressing.<\/p>\n<p class=\"body-text-paragraph\">A series of specials runs during weeknights, including half-off wine on Mondays, Steak Night on Tuesdays, half-off bubbles on Wednesdays and $10 Aperol Spritzes in the Courtyard on Thursdays.<\/p>\n<p class=\"body-text-paragraph\">The Reserve\u2019s kitchen is run by executive chef Andrew Bell.<\/p>\n<p class=\"body-text-paragraph\">In March, The Dallas Morning News reported chef John Tesar <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/03\/28\/knife-steakhouse-moving-dallas-john-tesar-meat-omakase\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/03\/28\/knife-steakhouse-moving-dallas-john-tesar-meat-omakase\/\">would move on from Knife<\/a> at The Highland, and the restaurant at the hotel would cease using the Knife name on Aug. 31.<\/p>\n<p class=\"body-text-paragraph\">There are still Knife restaurants across North Texas, including a Knife Steakhouse in Plano and Knife Italian Steakhouse in Irving. Tesar has plans for a \u201cmeat omakase\u201d dinner concept in Dallas, he told The News earlier this year.<\/p>\n<p class=\"body-text-paragraph\">The Reserve at The Highland is open for lunch Monday through Friday from 11 a.m. to 2 p.m., and for dinner seven days a week from 5 to 10 p.m.<\/p>\n","protected":false},"excerpt":{"rendered":"The restaurant replacing the former Knife steakhouse at hotel The Highland Dallas has been announced.
