I want to applaud Oak Cliff\u2019s Restaurant Beatrice for leading the way by recently undergoing a comprehensive greenhouse gas audit. They are believed to be the only restaurant to do so in the state of Texas. <\/p>\n

Restaurants play an important role in our communities and in the fight against climate change \u2014 from sourcing local ingredients to reducing waste (shout out to composting) and improving energy efficiency. <\/p>\n

Beatrice is a shining example of how every business can mitigate climate impacts on their local communities. I hope more restaurants follow their example, because when we support restaurants like Beatrice we\u2019re helping build a better future and a healthier planet, all while enjoying a great meal. I call that a win-win.<\/p>\n

3 Alvarado quarterback Kameron \u201cKJ\u201d Jenkins<\/b> \u2014 On Sept. 12, Alvarado junior quarterback Kameron \u201cKJ\u201d Jenkins etched his name into the record books, setting the Alvarado single-game passing record. Jenkins completed 17 of 26 passes for 447 yards and five touchdowns, leading the Indians to a 63\u201328 win over Robinson.<\/p>\n

This performance broke a school record that had stood for 21 years \u2014 an achievement that speaks volumes about Jenkins\u2019 skill, leadership and composure on the field. Wide receiver Demarcus Belton was equally impressive, contributing six receptions for 202 yards and three touchdowns.<\/p>\n

With this victory, the Indians improved to 3-0, and the program has reason to be optimistic as the season continues. This record-setting night represents not just individual excellence, but the strength of the team as a whole.<\/p>\n
