They include chefs like John Villa (now at the newly opened <a href=\"https:\/\/ny.eater.com\/restaurant-openings\/404757\/seahorse-restaurant-w-hotel-union-square-nyc-john-mcdonald-john-villa-mercer-street-hospitality\" target=\"_blank\" rel=\"noopener\">Seahorse<\/a>), who left the three-star NYT restaurant, Pico after it closed, for Tao, and Mark Ladner, who fine-tuned Stephen Starr\u2019s kitchens (and whose influence can be traced to dishes like the <a href=\"https:\/\/philly.eater.com\/dining-out-in-philly\/53419\/stephen-starr-borromini-philadelphia-review\" target=\"_blank\" rel=\"noopener\">100-layer lasagna appearing on Starr\u2019s Philly menus<\/a>). An interview in <a href=\"https:\/\/www.wmagazine.com\/culture\/danny-bowien-mission-chinese-buddakan-interview\" target=\"_blank\" rel=\"noopener\">W Magazine<\/a> shows how the pressures on independent restaurateurs and chefs can lead to a fork in the road. Now, Bowien is stepping into Starr\u2019s 25-year-old flagship to revamp the menu and recast its identity.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">At Buddakan, Bowien describes the assignment as \u201ca much, much larger operation,\u201d adding that Mission Chinese is playing at Bowery Ballroom, then Buddakan is Madison Square Garden,\u201d as he told<a href=\"https:\/\/www.wmagazine.com\/culture\/danny-bowien-mission-chinese-buddakan-interview?utm_source=chatgpt.com\" target=\"_blank\" rel=\"noopener\"> W Magazine<\/a>. He admitted that his first impulse of \u201clet\u2019s take all the risks in the world\u201d as he did at Mission Chinese, is now tempered. \u201cMy goal, creatively, is to make food that stands up to this room,\u201d he said in the same<a href=\"https:\/\/www.wmagazine.com\/culture\/danny-bowien-mission-chinese-buddakan-interview?utm_source=chatgpt.com\" target=\"_blank\" rel=\"noopener\"> interview<\/a>.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">Bowien also discussed how his philosophy has evolved.
