{"id":327121,"date":"2025-10-23T18:35:27","date_gmt":"2025-10-23T18:35:27","guid":{"rendered":"https:\/\/www.europesays.com\/us\/327121\/"},"modified":"2025-10-23T18:35:27","modified_gmt":"2025-10-23T18:35:27","slug":"gather-and-wonder-food-halls-hit-philadelphia-with-diverging-philosophies","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/us\/327121\/","title":{"rendered":"Gather and Wonder food halls hit Philadelphia with diverging philosophies"},"content":{"rendered":"<p>Two new food halls are landing in Philly, which raises a question: What\u2019s a food hall, exactly?\u00a0<\/p>\n<p>Should we be excited, or is a food hall just a glorified version of a food court? Do food halls bring something genuinely different and elevated? Are they all alike? Or are food halls more like snowflakes \u2014 no two are created exactly the same, with different business models and food philosophies?<\/p>\n<p>Annie Allman, the CEO of <a href=\"https:\/\/billypenn.com\/2025\/04\/18\/reading-terminal-market-strategic-plans\/\" target=\"_blank\" rel=\"noopener\">Reading Terminal Market<\/a>, defined food halls as \u201ca collection of prepared food or dining operators that operate in a shared space.\u201d<\/p>\n<p>While some may think Allman runs the GOAT of Philly Food Halls, they\u2019d be technically incorrect. As a nonprofit organization that also sells raw products, Reading Terminal is categorized as a public market. Still, as an expert in good food, good vibes and good vendors, we asked her what people want to see in a food hall space.<\/p>\n<p><img loading=\"lazy\" data-recalc-dims=\"1\" decoding=\"async\" width=\"780\" height=\"585\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/10\/readingterminal-breakfast08.jpg\" alt=\"\" class=\"wp-image-147466\"  \/>Reading Terminal Market is one of the nation\u2019s oldest and largest of its kind. (File photo\/Billy Penn)<\/p>\n<p>\u201cQuality,\u201d she said. \u201cIs it authentic? Is it differentiated? Is it consistent? And does it provide good value? It could be a very expensive item but still provide good value, or it could be a less expensive item and still provide good value.\u201d<\/p>\n<p>\u201cThere\u2019s really only one Reading Terminal Market, and we both constantly evolve and yet always maintain tradition,\u201d she added. \u201cI\u2019m not sure how some of these other places will position themselves.\u201d<\/p>\n<p>We investigated two recent arrivals on Philly\u2019s food hall scene \u2014 <a href=\"https:\/\/gatherfoodhall.com\/\" target=\"_blank\" rel=\"noopener\">Gather<\/a> and <a href=\"https:\/\/www.wonder.com\/?utm_campaign=202407_Google_BrandSearch_HDR_NA_All&amp;url=https:\/\/cz9ts.app.link\/Ocju9bf9ZOb&amp;utm_source=google&amp;utm_campaign=202407_Google_BrandSearch_HDR_NA_All&amp;gad_source=1&amp;gad_campaignid=20985171331&amp;gbraid=0AAAAABq3v3smPfLP7pwilYKz1eS2pdnvu&amp;gclid=CjwKCAjwgeLHBhBuEiwAL5gNEfmqQTJHeG7Lx5-f6V7fXFtJHmadBXJvu5LtOnzkMrAeSUqgHORXghoCkh0QAvD_BwE\" target=\"_blank\" rel=\"noopener\">Wonder<\/a> \u2014 to investigate these questions and learn if the new kids on the block will bring something fresh to the table.\u00a0<\/p>\n<p>Wonder <\/p>\n<p>You may have already heard that the Wonder food halls are taking Philadelphia \u2014 and residents\u2019 social media feeds \u2014 by storm. There\u2019s likely already one that just opened in your neighborhood, and if not, one is likely to come soon.\u00a0<\/p>\n<p>The company is in the midst of a rapid expansion, and plans to open over 10 locations in the city throughout the next few months. Just this year, it has opened locations in Fishtown, South Philly, University City and Rittenhouse.\u00a0<\/p>\n<p>The company has deep pockets. Mark Lore, The Wonder Group\u2019s founder, chairman and CEO, is a serial entrepreneur with an estimated net worth of $4 billion, according to <a href=\"https:\/\/www.forbes.com\/sites\/thomasgallagher\/2025\/09\/09\/these-14-billionaires-joined-the-forbes-400-list-in-2025\/\" target=\"_blank\" rel=\"noopener\">Forbes<\/a>. His past projects have included an ecommerce startup, Jet.com, that sold to Walmart and <a href=\"http:\/\/diapers.com\" target=\"_blank\" rel=\"noopener\">Diapers.com<\/a>. (Don\u2019t worry, the diaper and food hall ventures are unrelated). He\u2019s also the owner of the NBA\u2019s Minnesota Timberwolves.<\/p>\n<p>Wonder began in New York City in 2023. Since then, the company has been spreading fast. One differentiator is that it operates \u201cfully integrated kitchens.\u201d Unlike most food halls that have independent vendors, all the food inside is being created by Wonder. Its ethos is about flavor with convenience, and the company recently acquired <a href=\"https:\/\/www.grubhub.com\/?utm_source=google&amp;utm_medium=cpc&amp;utm_campaign=p:G+%7C+a:DINE+%7C+b:B+%7C+c:GRUB+%7C+d:NA+%7C+m:E+%7C+g:NY_DMA+%7C+t:ALL+%7C+exp:_acct_id-3329632822:camp_id-11878674475:adgroup_id-116869746153:kwd-4961869853:creative_id-622269875689:ext_id-:matchtype_id-e:network-g:device-c:loc_interest-9067609:loc_physical-9007325&amp;utm_term=grubhub&amp;utm_content=acct_id-3329632822:camp_id-11878674475:adgroup_id-116869746153:kwd-4961869853:creative_id-622269875689:ext_id-:matchtype_id-e:network-g:device-c:loc_interest-9067609:loc_physical-9007325&amp;gclsrc=aw.ds&amp;gad_source=1&amp;gad_campaignid=11878674475&amp;gbraid=0AAAAADrXjwaUqnkw-l1yU-fiBbYmZQNaN&amp;gclid=CjwKCAjwgeLHBhBuEiwAL5gNEeWQuTxrdAmtdRCUZrIKzM4gCu8JUNKABmUS40fFF0h4jADooL_VJxoCUt0QAvD_BwE\" target=\"_blank\" rel=\"noopener\">Grubhub<\/a> and <a href=\"https:\/\/www.blueapron.com\/?srsltid=AfmBOoqkPqml0UP1JXqHp2ux-uuyZpenxQ0pBf1acwEziVID1SOSxSTH\" target=\"_blank\" rel=\"noopener\">Blue Apron<\/a>.\u00a0<\/p>\n<p>You can download the <a href=\"https:\/\/apps.apple.com\/us\/app\/wonder-food-delivery\/id1504180759\" target=\"_blank\" rel=\"noopener\">Wonder App<\/a> to get food from its vendors, as well as from other spots around the city. The biggest pro is that you can order delivery through Wonder to mix and match cuisines. So if you have picky eaters or dietary restrictions in the family or a friend group, Wonder can cater to a lot of different taste buds. Diners can order a burger from Burger Baby, and then get a side of spiced fries from its Middle Eastern spot, Maydan, no problem.\u00a0<\/p>\n<p>\u201cWhen you think about why you go on Amazon, it\u2019s because you can get anything there,\u201d said Jason Rusk, Wonder\u2019s EVP of restaurant operations.\u00a0<\/p>\n<p><img loading=\"lazy\" data-recalc-dims=\"1\" decoding=\"async\" width=\"780\" height=\"520\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/10\/250514_HDR_Fishtown-Philly-PA_24_FPO-1.jpg\" alt=\"\" class=\"wp-image-217789\"  \/>Wonder food hall\u2019s Fishtown location. (Courtesy of Wonder)<\/p>\n<p>\u201cEveryone wants something different,\u201d he explained. \u201cSome people want pizza, someone else wants a salad, somebody else wants Thai. And when you get on some of these third-party apps, you\u2019re kind of left to have to make choices, and somebody loses in that choice. But with us, and what we\u2019re doing at Wonder, you have all the variety, all the different menu options that can come and get delivered to you in one single order.\u201d<\/p>\n<p>Wonder isn\u2019t really adding much by way of culture to the food scene in Philly. Ordering there is not helping a small business, but if you are someone who enjoys eating at Chipotle or Cava and appreciates convenience, it could be for you. Rusk said that the food has been tested and worked out by different chefs \u2014 including celebrity and big-name chefs like <a href=\"https:\/\/bobbyflay.com\/\" target=\"_blank\" rel=\"noopener\">Bobby Flay<\/a> and <a href=\"http:\/\/joseandres.com\/\" target=\"_blank\" rel=\"noopener\">Jose Andres<\/a>.<\/p>\n<p>\u201cI absolutely love our Detroit brick pizza,\u201d Rusk said. \u201cIt is really, really good. It\u2019s a thick-style crust, and the sauce is on top of the cheese, rather than underneath the cheese. It is definitely worth a second Peloton ride, but it\u2019s delicious.\u201d<\/p>\n<p>We at Billy Penn have different food preferences, so this mix-and-match ethos felt ripe for a team lunch order. While certain menus were out of some basic staples \u2014 like a chicken option or pico de gallo \u2014 overall we enjoyed the meal.<\/p>\n<p><img loading=\"lazy\" data-recalc-dims=\"1\" decoding=\"async\" width=\"780\" height=\"624\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/10\/Copy-of-Wonder_Variety_Tablescape_1.jpg\" alt=\"\" class=\"wp-image-217788\"  \/>A variety of the offerings at Wonder. (Courtesy of Wonder)<\/p>\n<p>\u201cI was very skeptical that one kitchen could produce so many different dishes quickly. I assumed the food would not be very good,\u201d one colleague said. \u201cHowever, my Maydan-branded lunch was pretty nice \u2014 the beef kebab was fairly tender, as promised, and the pickled onion, herbs, and three sauces were spicy and tasty.\u201d\u00a0<\/p>\n<p>The only real miss was a salmon poke bowl, that had strangely al dente rice, was smothered in sauce, and seemingly had tuna mixed into it. Individually, the total came out to around $20 with tax and fees per person, and the food was delivered in under an hour.\u00a0<\/p>\n<p>\u201cWe have integrated our stations into things like cooking groups or assembly line-esque type things that allow you to be able to customize and build to that,\u201d Rusk said. \u201cSo rather than operating them separately, [our kitchens] are collectively managed and staged depending on the cook time and how fast something takes, so that everything is prepared at the same time and leaves hot and ready.\u201d<\/p>\n<p>In other words, Wonder operates a bit like a ghost kitchen, but with a brick-and-mortar space that people can actually go and sit down with their food. And certainly, with so many new locations hitting the greater Philly area \u2014 Wonder is far from operating like a ghost. Instead, they are big, loud and ready to make their presence known.<\/p>\n<p>Gather Food Hall<\/p>\n<p>While Gather and Wonder are both food halls, their ethos are actually quite different.<\/p>\n<p>Gather Food Hall comes from <a href=\"https:\/\/hosphq.com\/?utm_source=google&amp;utm_medium=cpc&amp;utm_campaign=22804641565&amp;utm_content=183557940220&amp;utm_term=food%20hall%20management%20companies&amp;keyword=food%20hall%20management%20companies&amp;matchtype=b&amp;network=g&amp;adposition=&amp;device=c&amp;devicemodel=&amp;target=&amp;placement=)&amp;gad_source=1&amp;gad_campaignid=22804641565&amp;gbraid=0AAAAABRMZXltarycqeBXzUeC2EZNAYZTn&amp;gclid=CjwKCAjwgeLHBhBuEiwAL5gNEfy5XJnQg4EbmeyNtW2vYTpWRI1J2eFMgzkmOapC0X1qaB9kWOsV5BoC5fsQAvD_BwE\" target=\"_blank\" rel=\"noopener\">Hospitality HQ<\/a>, a Brooklyn-based company that opens food halls across the country. They will be located in the old Bulletin Building, next to 30th Street Station.\u00a0<\/p>\n<p>Gather is also working with <a href=\"https:\/\/believeinstudents.org\/\" target=\"_blank\" rel=\"noopener\">Believe in Students<\/a>, a Philly nonprofit that provides financial support to food-insecure college students. The idea is to make their food options more accessible and affordable. (Full disclosure: Richard Binswanger, a board member and board chair of Believe in Students, is the author\u2019s uncle.)<\/p>\n<p>Unlike Wonder\u2019s premise of providing endless options, Gather is curating space for just six vendors. For its debut on Oct. 31, it will open with five: <a href=\"https:\/\/billypenn.com\/2025\/04\/07\/dine-latino-restaurant-week-philly-deals\/\" target=\"_blank\" rel=\"noopener\">Mucho Per\u00fa<\/a>, <a href=\"https:\/\/www.instagram.com\/sahbyyfood\/?hl=en\" target=\"_blank\" rel=\"noopener\">Sahbyy Food<\/a>, <a href=\"https:\/\/www.elmictlanrestaurantpa.com\/\" target=\"_blank\" rel=\"noopener\">El Mictlan<\/a>, <a href=\"https:\/\/federaldonuts.com\/\" target=\"_blank\" rel=\"noopener\">Federal Donuts<\/a> and <a href=\"https:\/\/www.instagram.com\/bowldmasala\/\" target=\"_blank\" rel=\"noopener\">Bowl\u2019d Masala<\/a>. (Courtesy of Brandywine Realty Trust)<\/p>\n<p>The food hall will also have a \u201cBulletin Bar,\u201d in honor of the old newspaper, where you can sit and grab a drink.\u00a0<\/p>\n<p>\u201cHaving a variety of options in one central location is ideal for people to be able to walk around and see the different types of food \u2014 maybe foods you would never typically eat,\u201d said Emily Uliano, Gather\u2019s public relations representative from <a href=\"https:\/\/cashmanandassociates.com\/\" target=\"_blank\" rel=\"noopener\">Cashman &amp; Associates<\/a>. \u201cYou\u2019re going on your lunch break, and you take a lap around Gather, and you\u2019re introduced to all of these really cool and, for the most part, locally rooted international vendors.\u201d<\/p>\n<p>If some of Gather\u2019s vendor names sound familiar, it\u2019s because four of the five restaurants are local and have already had varying degrees of success in Philadelphia.\u00a0<\/p>\n<p>El Mictlan is a Mexican and West Coast-style restaurant that has a brick-and-mortar location in South Philly. It\u2019s also recently been featured in the <a href=\"https:\/\/www.inquirer.com\/food\/inq2\/best-restaurants-philadelphia-2025-20251015.html\" target=\"_blank\" rel=\"noopener\">Inquirer\u2019s best of list<\/a>. Mucho Per\u00fa is a Peruvian pop-up, which has been popular around the city and suburbs. Sahbyy Food is a Cambodian vendor from <a href=\"https:\/\/whyy.org\/articles\/philadelphia-southeast-asian-market-fdr-park-returns-spring-2023\/\" target=\"_blank\" rel=\"noopener\">FDR Park\u2019s Southeast Asian Market<\/a> that earned a Best of Philly nod for its <a href=\"https:\/\/www.phillymag.com\/best-of-philly-archive\/sahbyy-foods-lemongrass-cheesesteak\/\" target=\"_blank\" rel=\"noopener\">Lemongrass Cheesesteak<\/a>. Federal Donuts is, of course, Federal Donuts. And Bowl\u2019d Masala, an Indian-fusion spot with comfort food and customizable bowls, is the only vendor not originally from Philly.<\/p>\n<blockquote class=\"instagram-media\" data-instgrm-captioned=\"\" data-instgrm-permalink=\"https:\/\/www.instagram.com\/p\/DPXscspjF2W\/?utm_source=ig_embed&amp;utm_campaign=loading\" data-instgrm-version=\"14\" style=\" background:#FFF; border:0; border-radius:3px; box-shadow:0 0 1px 0 rgba(0,0,0,0.5),0 1px 10px 0 rgba(0,0,0,0.15); margin: 1px; max-width:540px; min-width:326px; padding:0; width:99.375%; width:-webkit-calc(100% - 2px); width:calc(100% - 2px);\"\/>\n<p>Hospitality HQ is run by co-CEO and founders Michael Wetherbee and chef Akhtar Nawab. Wetherbee said that investing in local vendors is an important part of its business model.\u00a0<\/p>\n<p>\u201cWe\u2019ve had very interesting, I don\u2019t want to say case studies, but examples of how by being present [locally], how that dramatically shifts, moves the dial and lends itself to success,\u201d he said.<\/p>\n<p>In one of these examples, Hospitality HQ worked with a chef who had previously run a successful burger concession stand \u2014 and once even worked at the U.S. Open.<\/p>\n<p>The company included the vendor, who had been making as much as $3 million in sales over a summer, into a project in the Midwest, thinking he would serve an ace. However, it was actually a local dumpling vendor that ended up being the food hall\u2019s shining star.<\/p>\n<p>\u201cThis was called Kathmandu Momo,\u201d Wetherbee said. \u201cThey were three friends. This was their first business. They would sell their handmade dumplings out of the back of a brewery on Friday nights. And so they had no business experience\u2026 They did triple the sales of this guy that has 30 years [of experience]. But it\u2019s because they were local. They were in their stall every day. Everybody knew them.\u201d<\/p>\n<p>The team behind Kathmandu Momo has now gone on to open five more locations.<\/p>\n<p>\u201cPeople were rooting for them,\u201d he said.<\/p>\n<p>Wetherbee also hopes that Gather Food Hall will be a permanent space for its vendors \u2014 some of whom come from an immigrant background and are not yet able to afford an entire brick-and-mortar location.<\/p>\n<p>\u201cIt\u2019s really a great opportunity for them to start a business and it\u2019s a launchboard for bigger things to come,\u201d he said.\u00a0<\/p>\n<p>Like most food halls, Gather\u2019s goal is to be a gathering spot for the neighborhood \u2014 which, despite being next to a transportation hub, right now is a bit bereft of food options.\u00a0<\/p>\n<p>\u201cIt\u2019s like a desert almost,\u201d Uliano said, describing the choices around 30th Street Station. \u201cThere\u2019s not really anywhere to go if you\u2019re early for your train or your train is delayed, just hang out and feel comfortable and safe \u2014 like you\u2019re in a really cool, vibrant environment. They do have a full service bar as well, the Bulletin Bar that\u2019s within the food hall. Through its partnership with Believe in Students, the food hall aims to give out 5,000 free meals to food-insecure students in its first year. Brandywine Realty Trust, the developer for the Bulletin Building, made a 10-year, $250,000 commitment to the project.\u00a0<\/p>\n<p>According to Believe in Students, each vendor is providing one meal option that can be acquired through a <a href=\"https:\/\/believeinstudents.org\/gather-food-hall\/\" target=\"_blank\" rel=\"noopener\">gift card<\/a> provided by participating campuses and nonprofit partners.<\/p>\n<p>Wetherbee said that the pricing for most Hospitality HQ Food Halls range anywhere from $14 to $25 for entrees, but Gather Food Hall is aiming to offer options as low as $12 to make pricing friendly for a student budget.<\/p>\n<p>\u201cIt\u2019s hard to focus on school when you\u2019re not sure where your next meal is coming from,\u201d Traci Kirtley, executive director of Believe in Students, said in a statement. \u201cGather Food Hall is establishing an innovative approach to solving this issue by not only feeding students, but elevating the issue in our public consciousness.\u201d<\/p>\n<p>Finding success<\/p>\n<p>How Gather and Wonder will fare in Philadelphia in the long run is uncertain.\u00a0<\/p>\n<p>Success is not guaranteed. New York City, a food hall destination, has seen a string of closures in the past few years, including <a href=\"https:\/\/www.crainsnewyork.com\/restaurants\/citizens-market-hall-manhattan-west-close-april\" target=\"_blank\" rel=\"noopener\">Citizens Market Hall<\/a>, <a href=\"https:\/\/ny.eater.com\/2024\/11\/8\/24291322\/gotham-west-market-food-hall-closing\" target=\"_blank\" rel=\"noopener\">Gotham West Market<\/a>, <a href=\"https:\/\/ny.eater.com\/2023\/3\/30\/23663032\/williamsburg-market-brooklyn-food-hall-closes-di-fara-alidoro\" target=\"_blank\" rel=\"noopener\">Williamsburg Food Hall<\/a> and <a href=\"https:\/\/ny.eater.com\/2024\/2\/9\/24067412\/the-market-line-closing-essex-crossing\" target=\"_blank\" rel=\"noopener\">the Market Line<\/a>.<\/p>\n<p>\u201cOperating costs have spiked so much coming out of COVID,\u201d Allman said, explaining the situation at Reading Terminal.\u00a0 \u201cOver the last couple of years, we have had a deficit in our operating budget.\u201d<\/p>\n<p>As a non-profit, the market has had to focus on its fundraising efforts.<\/p>\n<p>\u201cWe do a party for the market to raise money, which tends to close that operating gap,\u201d Allman said. \u201cAnd then we also get support from other foundations and private individuals, where we participate in the state <a href=\"https:\/\/www.pa.gov\/agencies\/budget\/programs-and-services\/for-people-doing-business-with-the-commonwealth\/for-grantees-and-subrecipients\/racp\" target=\"_blank\" rel=\"noopener\">RACP program<\/a>, the capital investment program.\u201d<\/p>\n<p><img loading=\"lazy\" data-recalc-dims=\"1\" decoding=\"async\" width=\"780\" height=\"585\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/10\/tambayan-filipino-readingterminal-06.jpg\" alt=\"\" class=\"wp-image-181708\"  \/>Chef-owner Kathy Mirano watches over the customers filling Tambayan\u2019s Reading Terminal Market counter. Rusk said that the Wonder locations in Philly are off to a promising start.\u00a0<\/p>\n<p>\u201cI actually have friends in Philadelphia that are talking about [Wonder],\u201d Rusk said. \u201cThey bring up the same things \u2014 it\u2019s really high-quality food by some great chefs, and I can order across multiple restaurants and get a single delivery. The team members have been really, really great. No matter if we\u2019re in the suburbs like King of Prussia or downtown in Fishtown, it\u2019s been really fun to offer some great opportunities to the team members within the communities which we serve.\u201d<\/p>\n<p>As for Wetherbee, he\u2019s hoping that Gather\u2019s five vendors will be able to make an impact.<\/p>\n<p>\u201cSuccess doesn\u2019t always mean opening five locations like this Momo vendor, right?\u201d he said. \u201cWe really are keen on focusing on diverse cuisine and immigrant cuisine, and especially because we are a minority-owned business \u2026 Both of our families, Akhtar and myself, our families immigrated from different countries.
