The Dallas restaurant, which opened Sept. 2, is helmed by chef Christophe De Lellis, a Paris native who previously led the kitchen at Jo\u00ebl Robuchon in Las Vegas. <\/p>\n<p class=\"body-text-paragraph\">Mamani is owned by brothers Henry and Brandon Conahim. If their names sound familiar, that\u2019s because they also own Namo and Bar Colette. Bar Colette\u2019s bar director <a href=\"https:\/\/www.dallasnews.com\/food\/2024\/05\/31\/enjoyment-without-the-commitment-this-dallas-bar-is-big-on-tiny-cocktails\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/2024\/05\/31\/enjoyment-without-the-commitment-this-dallas-bar-is-big-on-tiny-cocktails\/\">Ruben Rolon<\/a> was formerly head bartender at L\u2019Atelier de Jo\u00ebl Robuchon in Miami, where he won Michelin Guide Florida\u2019s <a href=\"https:\/\/guide.michelin.com\/us\/en\/article\/michelin-guide-ceremony\/ruben-rolon-michelin-guide-florida-2022-cocktails#:~:text=Ruben%20Rolon%2C%20MICHELIN%20Guide%20Florida%202022%20Exceptional%20Cocktails%20Award%20Winner\" rel=\"nofollow noopener\" target=\"_blank\">Exceptional Cocktails Award<\/a> in 2022.<\/p>\n<p class=\"body-text-paragraph\">Despite being open for less than two months, Mamani and its French and Italian-inspired menu impressed Michelin inspectors. Speaking of, no one outside of Michelin has any idea when inspectors visit a city and its restaurants, but now we know they were dining in North Texas within the past two months. We also know brand-new restaurants are fair game here. <\/p>\n<p>Related<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"aspect-ratio:190 \/ 127\" class=\"dmnc_features-article-body-embeds-related-story-module__2UraD flex-none object-cover dmnc_images-modern-image-module__QFaG- max-w-full h-auto text-white dmnc_images-modern-image-module__9Zlll bg-gray-light object-contain dmnc_images-modern-image-module__P3kZ4 w-full\" width=\"190\" height=\"127\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/10\/1761738267_901_OQGV2Q25KBHDXGSM7JE52HLLQY.jpg\" alt=\"Chef Tatsuya Sekiguchi works on a fish, picked up fresh fish flown in from Japan as he...\"\/>Little else new for D-FW<\/p>\n<p class=\"body-text-paragraph\">Aside from Mamani being awarded a star, there was only one other North Texas restaurant recognized by Michelin this year that wasn\u2019t last year. It, too, recently opened. <\/p>\n<p class=\"body-text-paragraph\">Dallas restaurant <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/08\/01\/where-to-eat-dallas-fort-worth-restaurants-august-2025\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/08\/01\/where-to-eat-dallas-fort-worth-restaurants-august-2025\/\">Sushi Kozy<\/a>, opened by former Uchi chef Paul Ko, is on this year\u2019s list of Recommended restaurants. Alongside it are all 20 of the North Texas restaurants that made last year\u2019s Recommended list. No new North Texas restaurants received the Bib Gourmand distinction.<\/p>\n<p class=\"body-text-paragraph\">This is a bit surprising considering there 13 new Recommended restaurants and eight new Bib Gourmand restaurants in Texas<\/p>\n<p>Another win for Dallas cocktails<\/p>\n<p class=\"body-text-paragraph\">For the second year in a row, Michelin\u2019s special award for exceptional cocktails went to a Dallasite. Last year it was <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2024\/11\/13\/how-a-26-year-old-dallas-bartender-became-a-michelin-winner\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2024\/11\/13\/how-a-26-year-old-dallas-bartender-became-a-michelin-winner\/\">Julian Shaffer<\/a>, former mixologist at Rye, who took home the award. This year, it was <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/03\/13\/how-dallas-restaurants-survived-covid-5-years-later\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/03\/13\/how-dallas-restaurants-survived-covid-5-years-later\/\">Chas Martin<\/a> who won the award for the cocktail program at Mister Charles. <\/p>\n<p class=\"body-text-paragraph\">Mister Charles, if you remember, <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2024\/11\/12\/michelin-named-wrong-dallas-restaurant-mister-charles-the-charles\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2024\/11\/12\/michelin-named-wrong-dallas-restaurant-mister-charles-the-charles\/\">was left off of Michelin\u2019s Recommended list<\/a> initially last year, while its sister restaurant, The Charles, was included by mistake.  Michelin corrected their mistake, adding Mister Charles to its roster a day after the ceremony. Perhaps this year\u2019s special award is a bit of payback? Or perhaps inspectors were genuinely impressed with the restaurant\u2019s cocktails, like the Highland Park Pharmacy Penicillin. <\/p>\n<p>Fort Worth trails the pack, again<\/p>\n<p class=\"body-text-paragraph\">Of the five cities that are part of the Michelin Guide Texas, Fort Worth is the only one that does not have any new restaurants represented this year.<\/p>\n<p class=\"body-text-paragraph\">In the 2024 Guide, three Fort Worth restaurants \u2014 Panther City BBQ, Birrieria y Taqueria Cortez and Goldee\u2019s Barbecue \u2014 received Michelin recognition. They are the city\u2019s only restaurants on Michelin\u2019s list again this year. <\/p>\n<p class=\"body-text-paragraph\">As was the case last year, Fort Worth is the only city in the Guide not to have a Michelin-starred restaurant.
