Add the Brussels sprouts, cut side down, and the onion. Cook undisturbed until deeply golden, 5 to 7 minutes. Push the vegetables to one side and add the kielbasa, letting it sear until browned, 2 to 3 minutes. Stir in  the spelt and oregano, tossing until warmed through. Turn off the heat and stir in the parsley and dill.
