{"id":375860,"date":"2025-11-13T11:54:26","date_gmt":"2025-11-13T11:54:26","guid":{"rendered":"https:\/\/www.europesays.com\/us\/375860\/"},"modified":"2025-11-13T11:54:26","modified_gmt":"2025-11-13T11:54:26","slug":"late-night-bakery-chain-plans-third-store","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/us\/375860\/","title":{"rendered":"Late-night bakery chain plans third store"},"content":{"rendered":"<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\"><strong>SAN ANTONIO<\/strong> \u2013 A Philadelphia-based bakery chain that caters to the late-night crowd is opening downtown.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">Insomnia Cookies<a href=\"https:\/\/www.bizjournals.com\/sanantonio\/news\/2025\/11\/03\/trader-joes-grocery-store-chain-opening-retailer.html\" target=\"_blank\" rel=\"nofollow noopener\"> plans to open its newest <\/a>store at 122 E Houston St., Suite 104, according to project details filed with the Texas Department of Licensing and Regulation.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">Construction on the estimated $241,297 project is expected to begin in December and be completed by January of next year.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">The 1,329-square-foot chain will take shape across the street from the Embassy Suites Riverwalk Hotel and in proximity to several other downtown restaurants, including Royal Blue Grocery, Bunz Handcrafted Burgers, Acenar Mexican Restaurant, and Chick-fil-A.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">Onyx Creative, an Ohio-based architecture, engineering and interior design company, is serving as the design firm on the project, according to the filing.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">The Business Journal reached out to Insomnia Cookies for comment on the new location but did not receive a response by publishing.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">The chain first expanded to the Alamo City in 2024 with<a href=\"https:\/\/www.bizjournals.com\/sanantonio\/news\/2025\/10\/28\/bakery-cafe-coffee-shop-concept-expanding-retail.html\" target=\"_blank\" rel=\"nofollow noopener\"> the opening of two <\/a>locations on the Northwest Side, at 4316 Gardendale Road in the Medical Center and 6010 UTSA Blvd. Suite 104 near the University of Texas at San Antonio.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">Insomnia Cookies was founded in 2003 by Seth Berkowitz, a student at the <a href=\"https:\/\/www.bizjournals.com\/sanantonio\/organization\/university-of-pennsylvania\" target=\"_blank\" rel=\"nofollow noopener\">University of Pennsylvania<\/a> at the time.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">In 2006, the late-night bakery opened its first brick-and-mortar location in Syracuse, New York.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">The <a href=\"https:\/\/www.bizjournals.com\/sanantonio\/news\/2025\/11\/04\/papoulis-greek-restaurant-expansion-new-location.html\" target=\"_blank\" rel=\"nofollow noopener\">brand has since expanded<\/a> with over 300 locations across the U.S.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">Its presence in Texas includes over 29 storefronts spanning from Lubbock to the Rio Grande Valley.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">Read more of this story at the <a href=\"https:\/\/www.bizjournals.com\/sanantonio\/news\/2025\/11\/06\/insomnia-cookies-expands-new-location-downtown.html\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.bizjournals.com\/sanantonio\/news\/2025\/11\/06\/insomnia-cookies-expands-new-location-downtown.html\">San Antonio Business Journal website<\/a>.<\/p>\n<p class=\"dist__Box-sc-1fnzlkn-0 dist__TextBase-sc-1fnzlkn-3 bYFsJw cuqaEv article-text\">Editor\u2019s note: This story was published through a <a href=\"https:\/\/www.ksat.com\/topic\/SABJ\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.ksat.com\/topic\/SABJ\/\">partnership<\/a> between KSAT and the San Antonio Business Journal.<\/p>\n<p>Copyright 2025 by KSAT &#8211; All rights reserved.<\/p>\n","protected":false},"excerpt":{"rendered":"SAN ANTONIO \u2013 A Philadelphia-based bakery chain that caters to the late-night crowd is opening downtown.
