{"id":396412,"date":"2025-11-22T07:18:14","date_gmt":"2025-11-22T07:18:14","guid":{"rendered":"https:\/\/www.europesays.com\/us\/396412\/"},"modified":"2025-11-22T07:18:14","modified_gmt":"2025-11-22T07:18:14","slug":"roman-italian-colosseo-opening-in-solana-beach","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/us\/396412\/","title":{"rendered":"Roman-Italian Colosseo Opening in Solana Beach"},"content":{"rendered":"<p>Roberto Ciacciofera figures if all roads lead to Rome, then everyone will be able to find his Roman-style restaurant when he opens <a href=\"https:\/\/www.instagram.com\/colosseosd\/\" target=\"_blank\" rel=\"noreferrer noopener\">Colosseo<\/a> in Solana Beach the first week of December.\u00a0<\/p>\n<p>Ciacciofera started cooking in Sicily when he was five, trying to guess what was in his mother\u2019s tomato sauce simply by his sense of smell. He came to San Diego in 2016 to become a chef. He opened R&amp;G Salumeria Wine Bar in Little Italy in 2020 with Giuseppe Gagliano, and Argentinian steakhouse Piedra Santa with Alberto Morreale earlier this year. But Colosseo will be his project as the solo owner and chef.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/11\/colosseo_san-diego-restaurant-768x1024.jpg.webp.webp\" alt=\"\" class=\"wp-image-117917\" style=\"width:564px;height:auto\"   data-mwl-img-id=\"117917\"\/>Courtesy of Colosseo<\/p>\n<p>He\u2019s not fazed by the thought of doing it all. \u201cThat\u2019s what I love to do,\u201d he says. \u201cI love to cook, I love to serve, and I love connection. I love people.\u201d<\/p>\n<p>For Colosseo\u2019s opening menu, Ciacciofera starts with traditional Roman dishes like amatriciana, carbonara, cacio e pepe, lamb, fish, and specials aplenty. Once he feels people have a solid understanding of the most well-known dishes of Rome, he\u2019ll expand into the lesser-knowns. He\u2019s patient. He knows people will, one day, be ready.<\/p>\n<p><a href=\"https:\/\/sandiegomagazine.com\/food-drink\/review-little-victory-wine-bar-in-carlsbad\/?utm_source=internal&amp;utm_medium=internal_link&amp;utm_campaign=highlight_embed\" target=\"_blank\" rel=\"noopener\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"534\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/11\/little-victory-wine-bar_san-diego-1024x683.jpg.webp.webp\" class=\"attachment-large size-large wp-image-113113 wp-post-image\" alt=\"\"   data-mwl-img-id=\"113113\"\/><\/a><\/p>\n<p>They\u2019ll emphasize Italian wine, he says, but serve the best wine from the best regions. A full liquor license also means cocktails.\u00a0<\/p>\n<p>The former Pizza Nova building holds around 100 guests, with space for about half outside under a covered patio. But even with a full house, the one thing Ciacciofera wants to ensure everyone feels from the moment they walk in is a <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/cesarina-group-opening-elvira-in-ocean-beach\/\" target=\"_blank\" rel=\"noopener\">genuine sense of Roman hospitality<\/a>\u2014as if enjoying Sunday dinner at your grandmother\u2019s house with your entire family.<\/p>\n<p>\u201c[It\u2019s] where everybody\u2019s together, enjoying music, talking in a relaxed environment,\u201d he says. \u201cMy goal is to have a family place\u2026 my house is your house.\u201d<\/p>\n<p>Colosseo opens at 945 Lomas Santa Fe Drive in Solana Beach early December 2025. In fact, the venues share a kitchen. Chef Nicholas Vassari used to be the chef de cuisine at Nobu, so the food is good to excellent (try his yellowtail lettuce cups) It fills a hole in OB\u2019s food and drink scene, which has plenty of craft beer and cocktail bars but not much in the way of wine after Gianni Buonomo Vintners picked up its stakes for the Midway District.\u00a0<\/li>\n<li>After a brief hiatus, Salvatore\u2019s Cucina &amp; Lounge is <a href=\"https:\/\/www.instagram.com\/p\/DRDWhI0ktY2\/?hl=en\" target=\"_blank\" rel=\"noreferrer noopener\">making a comeback<\/a> on November 22, with (checks notes) <a href=\"https:\/\/www.instagram.com\/p\/DRDWhI0ktY2\/?hl=en\" target=\"_blank\" rel=\"noreferrer noopener\">fire dancing<\/a> (possibly) and <a href=\"https:\/\/www.instagram.com\/p\/DHE-tIQSFOc\/?hl=en\" target=\"_blank\" rel=\"noreferrer noopener\">brunch<\/a> (definitely).
