And out of the 100, a whopping 35\u2014more than 25 percent\u2014are in New York City. (If you\u2019ve ever tried to get a reservation here, this feels about right.)<\/p>\n<p>The list considers how each restaurant has shaped American dining since 2000, all places that have influenced how we eat, how we talk about food and how chefs around the country learned to cook. Judges\u00a0took peak eras into acount and even voted for restaurants that have since closed (which is why you\u2019ll see names like wd~50 and Mission Chinese in the rankings). Styles vary wildly, but New York\u2019s presence is unmistakable: glossy temples of luxury, genre-bending tasting counters, palaces to pasta and \u201ccasual\u201d bo\u00eetes that still require a six-week wait all make appearances.<\/p>\n<p>Some wins on the list feel inevitable: you\u2019ll spot <strong><a href=\"https:\/\/www.timeout.com\/newyork\/news\/this-iconic-nyc-restaurant-was-just-named-the-best-in-the-u-s-by-a-global-restaurant-ranking-112525\" target=\"_blank\" rel=\"noopener\">Le Bernardin<\/a><\/strong>, <strong><a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/per-se\" target=\"_blank\" rel=\"noopener\">Per Se<\/a><\/strong>, <strong><a href=\"https:\/\/www.timeout.com\/newyork\/news\/eleven-madison-park-is-the-second-most-beautiful-michelin-starred-restaurant-in-the-world-010825\" target=\"_blank\" rel=\"noopener\">Eleven Madison Park<\/a><\/strong> and <strong>Daniel<\/strong>, all pillars of the city\u2019s fine-dining identity. Other inclusions show off some of the city\u2019s exciting shifts, like <strong><a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/atomix\" target=\"_blank\" rel=\"noopener\">Atomix<\/a><\/strong> moving Korean cuisine to the center of the global conversation, <strong><a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/semma\" target=\"_blank\" rel=\"noopener\">Semma<\/a><\/strong> showcasing regional Indian cuisine, <strong><a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/cote\" target=\"_blank\" rel=\"noopener\">Cote<\/a><\/strong> redefining what constitutes a steakhouse and <strong><a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/wildair\" target=\"_blank\" rel=\"noopener\">Wildair<\/a><\/strong> championing natty wine before it became a lifestyle. (Even <strong>Shake Shack<\/strong> made the cut, ultimate proof that what was once a hot dog cart can change American dining as much as a four-figure omakase.)<\/p>\n<p>The list is\u00a0a reminder of just how many eras New York has lived through in the past quarter-century, moving from molecular gastronomy to the ramen explosion, the Williamsburg-to-the-world pipeline, the tasting menu boom, the omakase arms race and the great red-sauce revival.
