Gonz\u00e1lez \/ Staff Photographer<\/p>\n<p class=\"body-text-paragraph\">With the Deep Ellum shop opening, Trejo and her partner in both life and business, Alex Henderson, now have four coffee shop locations. <\/p>\n<p class=\"body-text-paragraph\">\u201cMost of the times things just fall into our laps and we\u2019re really lucky,\u201d she said, \u201cbut this one we had to go for.\u201d<\/p>\n<p class=\"body-text-paragraph\">Trejo said the owners of the historic building were on the hunt for a coffee shop to replace the one that <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2023\/12\/08\/restaurant-closures-original-fireside-pies-thunderbird-station-howard-wangs-fiction-coffee\/\" target=\"_blank\" rel=\"noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2023\/12\/08\/restaurant-closures-original-fireside-pies-thunderbird-station-howard-wangs-fiction-coffee\/\">was previously there<\/a>. Along with drinks, it will have La Casita Bakeshop pastries, with specialty pastries brought in on the weekends. <\/p>\n<p class=\"body-text-paragraph\">La Casita Coffee will open by Dec. 10, 2025, at 3309 Elm St., Dallas.
