I\u2019m more serf than sovereign, but its 35-day, bone-in, dry-aged ribeye still haunts my dreams (although I\u2019d never turn down a melt-in-your-mouth cut of tender filet mignon). And don\u2019t even get me started on the chocolate chip bread pudding. Real ones know, and if you don\u2019t\u2014well, fix yourself.\u00a0<\/p>\n<p>The iconic cowboy-chic steakhouse has landed on San Diego Magazine\u2019s list for <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/steakhouse-restaurants-san-diego\/\" target=\"_blank\" rel=\"noopener\">Best Steakhouse<\/a> in <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/best-restaurants-san-diego-2025\/\" target=\"_blank\" rel=\"noopener\">2025<\/a>, <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/best-restaurants-in-san-diego-2024\/\" target=\"_blank\" rel=\"noopener\">2024<\/a>, <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/san-diegos-best-restaurants-of-2023\/\" target=\"_blank\" rel=\"noopener\">2023<\/a>, <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/san-diegos-best-restaurants-2022\/\" target=\"_blank\" rel=\"noopener\">2022<\/a>, <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/san-diegos-best-restaurants-2021\/\" target=\"_blank\" rel=\"noopener\">2021<\/a>, <a href=\"https:\/\/sandiegomagazine.com\/features\/san-diegos-best-restaurants-2020\/\" target=\"_blank\" rel=\"noopener\">2020<\/a>, <a href=\"https:\/\/sandiegomagazine.com\/features\/san-diegos-best-restaurants-2019\/\" target=\"_blank\" rel=\"noopener\">2019<\/a>\u2026 you get the gist. Not a great year to open\u2014smack dab in the middle of a nationwide housing crisis, bank failures, widespread unemployment, and suddenly way fewer corporate expense accounts earmarked for Tomahawks and old fashioneds.<\/p>\n<p>But they scraped and hung on, and it paid off. Cowboy Star went gangbusters, eventually opening a <a href=\"https:\/\/www.cowboystarcs.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">second location in Colorado Springs<\/a> in 2015\u2014a strategically glacial growth pace, explains Angie.<\/p>\n<p>\u201cWe are slow movers,\u201d she says. \u201cWe\u2019ve been approached dozens of times about different properties in town, and we say no a lot.\u201d<\/p>\n<p>Finally, they said yes to not just a new location in San Diego, but an entirely fresh concept\u2014She Rode West, slated to open summer 2026 in <a href=\"https:\/\/sandiegomagazine.com\/things-to-do\/bankers-hill-things-to-do\/\" target=\"_blank\" rel=\"noopener\">Bankers Hill<\/a> in the planned <a href=\"https:\/\/www.jwdainc.com\/projects\/park-summit\" target=\"_blank\" rel=\"noreferrer noopener\">Park Summit building<\/a> at Fifth Avenue and Upas.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1500\" height=\"844\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/12\/JWDA-Architects.jpg.webp.webp\" alt=\"Rendering of new Bankers Hill building Park Summit where She Rode West restaurant will open\" class=\"wp-image-119106\"   data-mwl-img-id=\"119106\"\/>Rendering Courtesy of JWDA Architects<\/p>\n<p>She Rode West isn\u2019t another Cowboy Star, Jon explains. It\u2019s a sister concept\u2014a gritty yet graceful take on the idea of a Western heroine. It\u2019s also the first project for the group as a quartet, adding longtime director of operations Andrea Thurston as a fourth partner. She\u2019s been with the group for a decade and, along with Angie, kept percolating on the idea of the potential evolution of Cowboy Star.<\/p>\n<p>\u201cThe name is super important,\u201d says Jon, pointing to strong female characters in old westerns that inspire a story. \u201cWhat did she leave back east? Was she running from something? What did she expect when she got out [there], and how far west did she go?\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1500\" height=\"925\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/12\/Cowboy-Star-7.jpeg.webp.webp\" alt=\"Interior of San Diego steakhouse Cowboy Star\" class=\"wp-image-119108\"   data-mwl-img-id=\"119108\"\/>Courtesy of Cowboy Star<\/p>\n<p>That open-ended narrative of discovery and adventure is the jumping-off point for the buildout and aesthetic, which will be designed by <a href=\"https:\/\/sandiegomagazine.com\/features\/frederick-charles-liebhardt-house\/\" target=\"_blank\" rel=\"noopener\">Paul Basile<\/a> of <a href=\"https:\/\/www.basilestudio.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Basile Studio<\/a> (he also handled the 2020 remodel of Cowboy Star East Village). Because She Rode West is part of a brand-new build in the Park Summit building, the 3,100-square-foot space with 20-foot floor-to-ceiling windows will feel brighter and airier than its older brother.<\/p>\n<p>Being on the ground floor of a residential building means residents and neighbors can drop in daily for a drink and a bite. So rather than design a menu to emulate Cowboy Star\u2019s special occasion feel, Jimenez says She Rode West\u2019s menu will be more approachable and sharable, while still maintaining its level of service and execution.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1500\" height=\"1000\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2025\/12\/Cowboy-Star.jpg.webp.webp\" alt=\"Cocktail drinks for San Diego steakhouse Cowboy Star set to open a new restaurant She Rode West\" class=\"wp-image-119107\"   data-mwl-img-id=\"119107\"\/>Courtesy of Cowboy Star<\/p>\n<p>Food and drink plans are still in very, very early stages, but guests can expect reimagined classics like cobb salads and beef carpaccio, plus some curated steak selections that nod (but don\u2019t directly lasso) to Cowboy Star. She Rode West won\u2019t be steak-driven, Jon assures. It\u2019ll be a seasonal, all-day menu, with a beverage program that follows that same ethos of reinvention (like the Prairie Pomodoro savory martini; or Rye\u2019d or Die, a twist on a rye Old Fashioned).
