He was raised in Louisiana, the home of the po\u2019boy sandwich.<\/p>\n<p class=\"body-text-paragraph\">The news comes after an <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2026\/01\/01\/why-new-york-sub-will-close-smu-university-park-dallas\/\" target=\"_self\" rel=\"noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2026\/01\/01\/why-new-york-sub-will-close-smu-university-park-dallas\/\">unaffiliated sandwich shop, New York Sub<\/a>, announced it may be closing in 2026 due to financial challenges as well. It's known for its sandwiches,...\"\/><\/p>\n<p class=\"body-text-paragraph\">The casual PoBoy Shop was known for its muffuletta, a sandwich loaded with ham, bologna, salami, provolone and giardiniera, on a circular bun. The order-at-the-counter shop also sold roast beef sandwiches, fried shrimp po\u2019boys and bags of Zapp\u2019s chips.<\/p>\n<p class=\"body-text-paragraph\">The PoBoy Shop was created after Meagher <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2023\/02\/27\/evans-meat-market-now-open-brings-cajun-flavors-to-highland-park\/\" target=\"_self\" rel=\"noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2023\/02\/27\/evans-meat-market-now-open-brings-cajun-flavors-to-highland-park\/\">opened Evan\u2019s Meat Market in Highland Park<\/a>, a shop intended to sell butchered meat and grab-and-go sides to the neighborhood. Po\u2019boys were but a part of Evan\u2019s menu, but the owner and chef found that his Louisiana-born sandwiches earned a following of their own. Meagher opened The PoBoy Shop in July 2025 to focus solely on sandwiches, and <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/08\/17\/evans-meat-market-closing-inflation-economy-dallas-highland-park\/\" target=\"_self\" rel=\"noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/08\/17\/evans-meat-market-closing-inflation-economy-dallas-highland-park\/\">Evan\u2019s Meat Market closed the next month in August 2025<\/a>.<\/p>\n<p class=\"body-text-paragraph\">The PoBoy Shop lasted less than six months \u2014 sad news for the Park Cities neighbors and Dallas businesspeople who enjoyed sandwiches with house-cured meat, which can be hard to find.<\/p>\n<p class=\"body-text-paragraph\">The company paid rent at a separate facility where the meat was cured. After Evan\u2019s Meat Market closed, that commissary kitchen supported just one store. To make the business model work, Meagher would have needed to open multiple stores to justify the separate facility.<\/p>\n<p class=\"body-text-paragraph\">He wasn\u2019t willing to outsource the cured meat, which Meagher believed was the difference-maker at The PoBoy Shop.<\/p>\n<p class=\"body-text-paragraph\">This restaurant closure is one example of how small businessowners are struggling to make the math work in 2026.<\/p>\n<p class=\"body-text-paragraph\">The PoBoy Shop was 8421 Westchester Dr., Dallas.
