{"id":498341,"date":"2026-01-07T06:59:20","date_gmt":"2026-01-07T06:59:20","guid":{"rendered":"https:\/\/www.europesays.com\/us\/498341\/"},"modified":"2026-01-07T06:59:20","modified_gmt":"2026-01-07T06:59:20","slug":"new-east-village-bar-only-pours-wines-that-are-at-least-10-years-old","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/us\/498341\/","title":{"rendered":"New East Village Bar Only Pours Wines That Are at Least 10 Years Old"},"content":{"rendered":"<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">The serial vegan restaurateur in the East Village, Ravi DeRossi <a href=\"https:\/\/www.overthrowhospitality.com\/team\/\" target=\"_blank\" rel=\"noopener\">and team<\/a> open a new restaurant on Wednesday, January 7, and \u2014 as they\u2019re known to do \u2014 they are flipping one of their former spaces. <a href=\"https:\/\/resy.com\/cities\/new-york-ny\/venues\/long-count?date=2026-01-06&amp;seats=2\" target=\"_blank\" rel=\"noopener\">Long Count<\/a>, an aged-wine and focaccia bar with a menu focused on fermentation, is opening at 155 Avenue B, at East 10th Street, replacing <a href=\"https:\/\/ny.eater.com\/2025\/4\/21\/24413039\/amor-e-amargo-soda-club-new-location-east-village\" target=\"_blank\" rel=\"noopener\">Soda Club<\/a>, the popular vegan wine bar that previously occupied the address.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">Soda Club didn\u2019t close so much as level-up: In April the bar <a href=\"https:\/\/ny.eater.com\/2025\/4\/21\/24413039\/amor-e-amargo-soda-club-new-location-east-village\" target=\"_blank\" rel=\"noopener\">moved<\/a> to a larger location at 95 Avenue A, after outgrowing its Avenue B footprint. Opened in 2022, Soda Club became a neighborhood staple thanks to its mostly natural wine list, vegan house-made pastas, and late-night energy.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">The new Long Count in its former digs is built around the premise that every wine poured by the glass is at least 10 years old. Instead of treating age as something precious or prohibitively expensive, the bar frames older wines as something accessible.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">Partner and wine director Drew Brady assembled the wine list; he also oversees Soda Club\u2019s list. Over the past several years, Brady has been tracking down overlooked back vintages from importer cellars and distributor warehouses \u2014 wines that aged into something compelling but may be an outlier in more standard by-the-glass programs. The list spans oxidative whites, aged ros\u00e9s, skin-contact wines, and big reds that have softened and opened up. At Long Count, those bottles aren\u2019t an exception; they\u2019re the point.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">\u201dYou think of vintage wine \u2014 it couldn\u2019t get more intimidating for somebody who\u2019s a casual wine drinker. You\u2019re just like, \u2018oh God, I\u2019m out,\u2018\u201d says Brady. But the difference between fancy vintage wines and, say, collectibles that you\u2019d buy and keep in a cellar for years, is that many are aged by the winemaker before bottling. And these bottles aren\u2019t necessarily stuff that\u2019s going to be sold in an auction, so they\u2019re not crazy expensive. Plus, many were in the U.S. before President Donald Trump\u2019s tariffs spiked the price of imported wines. Once poured, wines are kept fresh using <a href=\"https:\/\/go.skimresources.com\/?id=1025X1701644&amp;xs=1&amp;url=https%3A%2F%2Fwww.coravin.com%2F%3Ftw_source%3Dgoogle%26tw_adid%3D497858010884%26tw_campaign%3D11771911646%26tw_kwdid%3Dkwd-35762151512%26gad_source%3D1%26gad_campaignid%3D11771911646%26gbraid%3D0AAAAADpkOaT2befsj9a3SVKTbUsPN2ZcJ%26gclid%3DCj0KCQiAgvPKBhCxARIsAOlK_Eod7phov3KyJ6ILgi0icpUkMQuGKOiFzeixiPsPWXUYNoPwPhqSrfUaAgwhEALw_wcB\" rel=\"sponsored noopener\" target=\"_blank\">Coravin <\/a>technology.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">The brief food menu complements the wine. Chefs Galen Kennemer (previously of Blanca and One White Street) and Haley Duren (formerly of <a href=\"https:\/\/ny.eater.com\/restaurant-closings\/400587\/cadence-restaurant-closing-east-village\" target=\"_blank\" rel=\"noopener\">now-closed Cadence<\/a>) have built a vegan menu anchored by focaccia and layered with fermented sauces, vinegars, and infused oils. Also look for arancini with truffles, lacto-fermented fries, radicchio salad, and hazelnut cake.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">In terms of DeRossi\u2019s streak of vegan restaurants, he says it\u2019s not an issue. In the case of the popular Soda Club, he says, \u201c90 percent of clientele is not vegan: They just eat there and don\u2019t even realize it. We have never pandered to the trend. There is no manifesto on the menu; there are no qualifiers to the experience.\u201d<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">The narrow room with its long bar stays low-key: candle-lit, vinyl-driven, and intentionally unpolished.
