Chef Diego Rossi\u2019s <a href=\"https:\/\/www.trippamilano.it\/\" target=\"_blank\" rel=\"noopener\"> Trippa<\/a>, which has shaped Milan dining scene since 2015, has been fully booked most nights for years, due to limited seating and a sprint of a reservation system. It\u2019s also due to Rossi\u2019s cult-status for having applied Michelin-starred sensibility to a less-formal format, where he incorporates traditional ingredients in a Milanese style, like offal and regional pastas with in-season produce. Since Trippa\u2019s first pop-up at Roscioli in 2024, Roscioli has even kept the chef\u2019s vitello tonnato on the menu as a nod to the ongoing friendship between the kitchens. (Roscioli\u2019s culinary director, Taylor Hester, recently spent a week in Milan cooking alongside the Trippa team.)<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">In New York, the $95-per-person dinner ($55 optional wine pairing) will feature a menu showcasing Trippa\u2019s most iconic dishes alongside new ones developed exclusively for the event. That includes beef tartare with Sardo di Lago and Parmigiano, and tagliatelle with lamb ragu.
