Last year, Phoenix welcomed a <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/biggest-phoenix-restaurant-openings-of-2025-40627714\/\">fresh slate of new spots<\/a>, including plenty of posh Mediterranean eateries, fresh slice shops and a <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/phoenix-coffee-shop-bakery-chaconne-and-peixoto-opens-downtown-22750329\/\">multi-concept cafe serving killer coffee and pastries<\/a>.<strong> <\/strong>2025 marked the return of one <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/look-inside-durants-reopened-phoenix-steakhouse-40627807\/\">iconic Valley steakhouse<\/a> and the demise of another, which <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/biggest-phoenix-restaurant-closures-of-2025-40628268\/\">closed along with other adored restaurants<\/a> that served craveable tacos, comforting gastropub cuisine and prix fixe tasting menus.<\/p>\n<p>The appetite of diners and ambitions of restaurateurs haven\u2019t left these kitchens vacant for long. A wave of <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/most-exciting-new-phoenix-restaurants-opened-in-december-40634660\/\">new restaurants arrived in December<\/a>, and more are on the horizon.\u00a0<\/p>\n<p>This year, restaurants drawing on flavors from across Asia are coming in strong, along with a theatrical Italian restaurant backed by big local names and a chain roadside stop known for its barbecue and road trip-friendly snacks.<\/p>\n<p>Here are the 10 restaurants and bars that we can\u2019t wait to visit, and that stand to reshape the Valley\u2019s dining scene, in 2026.<\/p>\n<p>Tropic Thunder<\/p>\n<p><strong>Opens Jan. 21<br \/>1014 N. Second St.<br \/><\/strong>Restaurateur Julian Wright has already given Roosevelt Row revelers spots to sip craft beer, sake and cocktails. Soon, a \u201ccheeky tiki\u201d bar will join Wright\u2019s other downtown haunts Pedal Haus Brewery, Sake Haus and Luckys Indoor Outdoor. <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.instagram.com\/tropicthunderphx\/\">Tropic Thunder<\/a> is set to open on Jan. 21 on Second Street just north of Roosevelt Street. The bar will feature several classic tiki cocktails along with bar staples, such as beer-and-shot combos. Wright has partnered with architect Wesley James to design the space. The two worked together on the Tempe dual bar concept, Devil\u2019s Hideaway and Idle Hands, and James also designed the immersive Valley bars Century Grand and UnderTow. Wright describes the aesthetic as a \u201ctwist\u201d on traditional tiki with a \u201cbit of a punk rock vibe.\u201d We can\u2019t wait to pull up an animal print stool and bask in the black light glow while sipping a Jungle Bird.<\/p>\n<p><img decoding=\"async\" height=\"860\" width=\"1024\" loading=\"lazy\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/01\/679863605304183503.jpg\" alt=\"PoNy's Miches owners in front of downtown building.\" class=\"wp-image-40616201\"  \/>PoNy\u2019s Miches founders Jose Flores and Analiz Gonzalez will open a second location in the former FEZ in downtown Phoenix.<\/p>\n<p>PoNy\u2019s Miches<\/p>\n<p><strong>Opens in February<br \/>105 W. Portland St.<br \/><\/strong>The popular West Valley mariscos joint <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.instagram.com\/ponysmiches_az\/\">PoNy\u2019s Miches<\/a> is <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/west-valley-mexican-spot-expands-into-iconic-downtown-space-40614883\/\">going big in downtown Phoenix<\/a>. Its owners, Jose \u201cPony\u201d Flores, his wife, Analiz Gonzalez and Sergio Escamilla will open PoNy\u2019s Miches Michelada Bar &amp; Grill in the former home of FEZ on Central. The expansive restaurant on the corner of Central Avenue and Portland Street is getting a beach-inspired refresh. The PoNy\u2019s team says the full kitchen means diners can expect a larger menu. Customers will still find shrimp ceviches with scratch-made sauces, seafood tacos and loaded fries, but those will be served alongside new options, such as wings and burgers. PoNy\u2019s westside location does not have a liquor license; at the downtown restaurant, guests will be able to sip a fully loaded michelada made with Flores\u2019 fresh mix and house chamoy.<\/p>\n<p><img decoding=\"async\" width=\"482\" height=\"362\" loading=\"lazy\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/01\/Nadu.png\" alt=\"Dishes of Indian food\" class=\"wp-image-40614837\" style=\"width:1216px;height:auto\"  \/>Nadu\u2019s first location opened in Chicago in April 2025, serving modern Indian cuisine.<\/p>\n<p>Nadu<\/p>\n<p><strong>Opens in early 2026<br \/>21001 N. Tatum Blvd.<br \/><\/strong>Valley gourmands and chefs alike have been abuzz about the <strong><a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/new-michelin-guide-is-coming-to-arizona-40627676\/\">Michelin Guide\u2019s impending arrival<\/a><\/strong>.<strong> <\/strong>This stamp of approval, to some, is recognition of the scene\u2019s entrance onto a bigger stage. Speculation about which restaurants may make the list abounds. Meanwhile, the team behind Nadu has continued to dazzle Valley diners at their Chandler restaurant, Feringhee Modern Indian, and racked up Michelin stars and recognition in other states. Chef Sujan Sarkar, a co-founder of Feringhee, received a star and a Bib Gourmand<strong> <\/strong>for two restaurants in Chicago, the latter of which is <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.naduchicago.com\/\">Nadu<\/a>. Soon, Valley diners will get a \u201cbold, immersive taste of India\u201d from a Nadu location opening at <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/4-new-restaurants-coming-to-desert-ridge-40614834\/\">Desert Ridge Marketplace<\/a>.<\/p>\n<p>Udon Shin<\/p>\n<p><strong>Opens in early 2026<br \/>138 S. Dobson Road, #108, Mesa<br \/><\/strong>Renowned Japanese restaurant <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/udonshin.com\/\">Udon Shin<\/a> is known for drawing long lines of customers eager to taste its viral carbonara udon and crispy tempura. The first U.S. location of the popular restaurant from chef and owner Narahara Shinji, is coming to the Valley. It will join a <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/new-restaurants-join-expanded-mekong-plaza-in-mesa-40622552\/\">slew of new eateries<\/a> in Mesa\u2019s recently expanded Mekong Plaza. Details about the U.S. menu are scant, though the restaurant, which is led by the team who brought Mensho Ramen to Arizona, has teased its house-made noodles, dashi and signature carbonara with tempura bacon. Camelback Road, Scottsdale<br \/><\/strong>Fans of homemade soup dumplings, pillowy bao and wontons doused in chile oil won\u2019t have to wait much longer to try the renowned Taiwanese restaurant <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/dtf.com\/en-us\">Din Tai Fung<\/a>. The international chain has locations across the globe, with U.S. restaurants in California, Nevada, New York, Oregon and Washington. In Scottsdale, the new restaurant will take up a 10,000-square-foot space on the ground level of the Scottsdale Fashion Square mall, with seating for 340 customers. The restaurant will feature a window into the dumpling kitchen, a signature spot at each Din Tai Fung location where customers can watch talented cooks carefully fold perfect dumplings. Even better news? The Pretty Decent Concepts team knows a thing or two about building spaces with drama and flair. They\u2019ve immersed drinkers in a retro jet lounge with downtown\u2019s <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/best-of-phoenix\/2025\/nightlife\/best-new-bar-22743761\/\">Carry On<\/a> and taken diners to the Yucatan at the Tempe hotspot <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/new-tempe-restaurant-filthy-animal-left-us-lost-in-the-woods-21734957\/\">Filthy Animal<\/a>. For this latest Tempe project, the Pretty Decent Concepts team has partnered with celebrity chef Scott Conant to craft a menu of classic Italian and Roman items. Diners will be able to dive into pasta amatriciana from curved booths flanked by custom statutes. Bullard Ave., Goodyear<br \/><\/strong>How good can beef jerky and barbecue sandwiches from a gas station really be? Travelers and tasters alike can decide for themselves when <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/buc-ees.com\/\">Buc-ee\u2019s<\/a> arrives this summer. The mega convenience store chain from Texas will open its first Arizona location in Goodyear off of Interstate 10. A bevvy of treats, along with reliably clean bathrooms, endear people to the highway-adjacent shops that boast a gregarious beaver as a mascot. The duo plan to open the Southeast<a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/phoenix-restaurant-and-bar-pros-team-up-to-open-new-cocktail-lounge-22743103\/\"> Asian-inspired Hornbill<\/a> in the former home of The Market by Jennifer\u2019s in Arcadia. This food-forward lounge will feature shareable \u201csmall plates, very seasonally driven and from all parts of Asia,\u201d Russo says, such as chile crab, noodles, hamachi and tartares. Seventh St., Tempe<br \/><\/strong>Cat Bunnag and Dan Robinson, the owners of the exceptional Thai street food eatery <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/glaibaanaz.com\/\">Glai Baan<\/a>, plan to <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/glai-baan-owners-to-open-new-tempe-restaurant-22115532\/\">open a new restaurant<\/a> in Tempe\u2019s historic Gov. Benjamin B. Moeur House and Hatton Hall. What that concept will be is still in development, Bunnag shared with Phoenix New Times. But the exciting news is that diners will soon have another place to experience Bunnag\u2019s acclaimed cooking. The Tempe space is located just off of Mill Avenue on the corner of Seventh Street and Myrtle Avenue. It\u2019s weathered plenty of changes to the area, but perhaps the most notable was dodging a wrecking ball.The former home to the beloved Bergies Coffee Roast House was slated to become a nightclub before that <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/bottled-blonde-cancels-gilbert-plans-following-developers-arrest-20566885\/\">project fell apart in late 2024<\/a>. Enter Nathan Ares and Ares Collective, which operated an outpost of the brunch spot Prep &amp; Pastry next door. Ares shuttered Prep &amp; Pastry and has a new restaurant in the works that will utilize both spaces and the courtyard in front of the house. Last year, Ares shared his vision for the forthcoming <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/new-restaurant-set-to-open-in-former-bergies-in-gilbert-22265580\/\">Clare House Social<\/a>, which will include a huge pergola, small outdoor bar, TVs airing games and a window for customers to order prime rib sandwiches, salads and shareable snacks.<\/p>\n<p><strong>Bonus:<\/strong> There is one Valley restaurant that is reportedly set to open in 2026. But after the hotel in which it will reside has experienced heaps of delays, we\u2019re crossing our fingers: <\/p>\n<p><img decoding=\"async\" height=\"683\" width=\"1024\" loading=\"lazy\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/01\/bar_mar__mussels_in_escabeche_louiievicta.webp.jpeg\" alt=\"\" class=\"wp-image-40029897\"  \/>Bar Mar is a seafood-driven eatery whose menu includes raw items, conservas, shareable plates and larger bites. Mussels in escabeche, pictured, are served with sourdough.<\/p>\n<p>Bonus: Bar Mar at VAI Resort<\/p>\n<p><strong>9601 Cardinals Way, Glendale<br \/><\/strong>This seafood-driven restaurant, backed by Spanish-American celebrity chef and humanitarian Jos\u00e9 Andr\u00e9s, could be one of the year\u2019s splashiest openings. So why are we hedging on <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/chef-jose-andres-to-open-restaurant-at-vai-resort-glendale-20407291\/\">Bar Mar<\/a>? The restaurant\u2019s home, at VAI Resort in Glendale, has been <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/arts-culture\/when-is-vai-resort-opening-what-to-know-about-the-glendale-projects-status-40611070\/\">plagued by delays<\/a>. Originally anticipated to open in 2023, the 60-acre hotel and entertainment complex\u2019s opening date has been pushed back several times. This fall, VAI officials released a statement saying they\u2019re \u201cnot ready to provide a specific opening date.\u201d We hope, for the sake of Valley diners eager to experience Andr\u00e9s\u2019 \u201ccelebration of the sea,\u201d that changes soon.<\/p>\n<p>\t\t\t\t\t\t\t\t<script async src=\"\/\/www.instagram.com\/embed.js\"><\/script><\/p>\n","protected":false},"excerpt":{"rendered":"The Valley\u2019s restaurant scene is never stayed.
