Soon, a second location will open in downtown Phoenix.\t\t\t\t\t\t\t\t\t\t\t\t\t<\/p>\n<p>Sara Crocker<\/p>\n<p>A new restaurant will raise the stakes, and the steaks, at the Arizona Center. The <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/wren-and-wolf-team-to-open-2-restaurants-and-a-bar-in-downtown-phoenix-18579305\/\">recently revitalized dining and shopping hub<\/a> plans to add Origen, a Mexican steakhouse, to its growing list of new restaurants this spring.<\/p>\n<p><a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.origengilbert.com\/\">Origen<\/a> is anticipated to open in late February or early March, according to owner Eduardo Medina.<\/p>\n<p>The steakhouse is poised to join a well-stocked lineup that includes <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/a-look-inside-cleaverman-and-filthy-in-downtown-phoenix-40622684\/\">Cleaverman<\/a> and forthcoming sibling restaurant, <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/new-phoenix-restaurants-bars-opening-pretty-decent-concepts-20631274\/\">Uppercut<\/a>, a beef-inspired omakase. Medina says he\u2019s excited to join these \u201camazing\u201d places downtown, but feels Origen will stand out from the herd.\u00a0<\/p>\n<p>\u201cI think we have a new proposal. We are a Mexican fine dining steakhouse,\u201d Medina says.\u00a0<\/p>\n<p>The owner is from M\u00e9rida, the capital of the Mexican state of Yucat\u00e1n. He ran three restaurants in the country before opening Origen stateside in October 2024. The Gilbert restaurant is located within Verde at Cooley Station, near Recker and Williams Field roads.<\/p>\n<p>With this second location, Origen will double down on elements Gilbert customers have grown to love. The restaurant offers an elegant atmosphere, without the dress code that\u2019s required or implied at other steakhouses. The dining room is sophisticated, with modern furniture and views of chefs working the grill in the open kitchen. The scent of charred wood hits your nose as soon as you walk in. Where other places would install stone or crystal, Origen features bespoke chandeliers made from wood slats and walls clad with panels of charred logs from Flagstaff. Medina says it\u2019s the kind of detail people like to reach out and touch.\u00a0<\/p>\n<p>\u201cOne of the things that I really like is when people come (to the restaurant), they use their five senses,\u201d Medina says.<\/p>\n<p><img decoding=\"async\" height=\"683\" width=\"1024\" loading=\"lazy\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/01\/CK9A5177-Enhanced-NR-e1768509560504.jpg\" alt=\"A tomahawk steak on a wood platter.\" class=\"wp-image-40636604\"\/>Origen\u2019s signature steak is a 40-ounce tomahawk.<\/p>\n<p><strong>What to expect at Origen downtown<\/strong><\/p>\n<p>Downtown, diners will find the same menu and similar decor, Medina says. But, hours will expand to include lunch service for downtown workers.<\/p>\n<p>Origen\u2019s menu is steak-forward, but also includes tacos, enchiladas and the classic Yucatan dish, cochinita pibil. This wider range of options attracts both couples on date nights and families, Medina notes. In Gilbert, it\u2019s become the kind of spot where parents can split a 40-ounce tomahawk and sip mezcalitas while their kids nosh on a quesadilla. Groups often graze on pork belly tacos, a ribeye and ceviche.\u00a0<\/p>\n<p>\u201cOne of the things that I really like for our restaurant is that it\u2019s shareable food,\u201d he says, \u201cso you can share with your friends and your family.\u201d<\/p>\n<p>The restaurant also offers a daily happy hour and a weekend brunch menu featuring steak and eggs or chilaquiles.<\/p>\n<p>To complement these dishes, Origen\u2019s bar features Mexican beers, mocktails and cocktails. In addition to tequila tipples, cocktail options include a churro carajillo and classic penicillin. The restaurant also offers a deep wine list. Diners who order a bottle can commemorate their experience by adding a personal note on a leather tag. The empty bottles are then immortalized in a private dining space called the Memory Room.<\/p>\n<p>\u201cWhen you open a bottle, it\u2019s always for a good memory, so what we try is to make memories for life,\u201d Medina says.<\/p>\n<p>With this soon-to-arrive second location, Origen is part of a major expansion of steakhouses around the Valley. Among those that have or will open this year are <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/sushi-roku-team-returns-with-new-scottsdale-restaurant-boa-40634377\/\">BOA Steakhouse<\/a>, <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/old-hollywood-style-dining-is-coming-to-old-town-scottsdale-22664211\/\">Drake\u2019s Hollywood<\/a>, <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/scottsdale-italian-restaurant-to-become-a-vibey-steakhouse-40631509\/\">The Guest House<\/a>, <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/scottsdale-steakhouse-to-bring-vibe-dining-to-downtown-phoenix-40629386\/\">STK<\/a>, <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/4-new-restaurants-are-coming-to-the-former-paradise-valley-mall-21624123\/\">Harry &amp; Izzy\u2019s<\/a> and <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/4-new-restaurants-coming-to-desert-ridge-40614834\/\">Terra Guacha Brazilian Steakhouse<\/a>. And, Origen is part of the revitalized dining options at the Arizona Center, which will also include <a target=\"_blank\" rel=\"noopener noreferrer\" href=\"https:\/\/www.phoenixnewtimes.com\/food-drink\/phoenix-staple-chula-seafood-to-open-downtown-restaurant-40620591\/\">Chula Seafood<\/a>.\u00a0<\/p>\n<p>Medina sees this growth, of steakhouses and restaurants writ large, as a positive.<\/p>\n<p>\u201cThat means the area, it\u2019s growing,\u201d he says, \u201cand we\u2019re growing with them.\u201d<\/p>\n<p>Origen<\/p>\n<p><strong>Opens this spring:<br \/>455 N.
