Brandon Barr\u00e9<\/p>\n<p><a target=\"_blank\" rel=\"noopener nofollow\" href=\"https:\/\/carversteak.com\/\" data-lasso-id=\"2925234\">Carversteak<\/a>, one of the best and liveliest meateries on the Las Vegas Strip, will make its <a target=\"_blank\" rel=\"noopener nofollow\" href=\"https:\/\/carversteaknyc.com\/\" data-lasso-id=\"2925235\">New York debut<\/a> when it opens on West 48th Street on Friday, March 20.\u00a0<\/p>\n<p>Like the Las Vegas original, <a href=\"https:\/\/observer.com\/list\/best-new-restaurants-nyc-march-2026\/\" data-lasso-id=\"2925236\" rel=\"nofollow noopener\" target=\"_blank\">the New York location<\/a> will feature branded dry-aged tomahawks, wagyu cheesesteak bites, ice-cold martinis and custom \u201cchoose your weapon\u201d boxes with an assortment of steak knives. But there will be plenty of new offerings as <a href=\"https:\/\/observer.com\/company\/carver-road-hospitality\/\" title=\"Carver Road Hospitality\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Carver Road Hospitality<\/a> CEO <a href=\"https:\/\/observer.com\/person\/sean-christie\/\" title=\"Sean Christie\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Sean Christie<\/a> considers how to balance Las Vegas razzle-dazzle with New York refinement and bring his own sense of theater to the Theater District.\u00a0<\/p>\n<p>Instead of the caviar poppers that <a href=\"https:\/\/observer.com\/company\/carversteak\/\" title=\"Carversteak\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Carversteak<\/a> has in Las Vegas, executive chef <a href=\"https:\/\/observer.com\/person\/daniel-ontiveros\/\" title=\"Daniel Ontiveros\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Daniel Ontiveros<\/a> will serve caviar-and-potato popsicles that are a playful nod to McDonald\u2019s hash browns with a different shape. Other new dishes at New York\u2019s Carversteak include short rib croquettes, uni toast, French onion short rib and lobster rigatoni alla vodka. Famed mixologist <a href=\"https:\/\/observer.com\/person\/francesco-lafranconi\/\" title=\"Francesco Lafranconi\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Francesco Lafranconi<\/a>, who has showcased a martini cart and a spritz bar at Carversteak in Las Vegas, will have a freezer martini bar and an Old Fashioned cart in New York.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"lazyload size-full-width wp-image-1634038\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/03\/CS0692-B.jpg\" alt=\"\" width=\"970\" height=\"647\"  \/>Carversteak\u2019s caviar-and-potato popsicles and cocktails. Carversteak<\/p>\n<p>For Christie, who was a longtime Las Vegas hospitality executive with a focus on nightlife and entertainment before he started Carver Road, the goal is to turn dinner into a spectacle that can and should be the main event of any given night.<\/p>\n<p>\u201cToward the end of my tenure at Wynn and in the beginning of my tenure at MGM, nightlife was evolving,\u201d Christie tells Observer. \u201cAnd for myself, I like to socialize, to be out, but I like to do that in a much different way now. At Carver Road, our motto is, \u2018We sell fun.\u2019 I believe that restaurants have taken on a more significant stake in our overall social life. It used to be something you go to for a meal and then go on to the next thing.\u201d<\/p>\n<p>Christie used to run Las Vegas party venues like Encore Beach Club. But nowadays, he wants to talk about moments like the first time he went to Torrisi and sat at the bar, or the energy he soaked up when he visited <a href=\"https:\/\/observer.com\/2026\/01\/the-corner-store-las-vegas-cosmopolitan-opening\/\" data-lasso-id=\"2925237\" rel=\"nofollow noopener\" target=\"_blank\">The Corner Store<\/a>. Not incidentally, <a href=\"https:\/\/observer.com\/person\/david-rockwell\/\" title=\"David Rockwell\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">David Rockwell<\/a>\u2019s <a href=\"https:\/\/observer.com\/company\/rockwell-group\/\" title=\"Rockwell Group\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Rockwell Group<\/a>, whose recent hits include <a href=\"https:\/\/observer.com\/company\/the-corner-store\/\" title=\"The Corner Store\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">The Corner Store<\/a>, <a href=\"https:\/\/observer.com\/company\/coqodaq\/\" title=\"Coqodaq\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Coqodaq<\/a> and New York\u2019s <a href=\"https:\/\/observer.com\/company\/din-tai-fung\/\" title=\"Din Tai Fung\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Din Tai Fung<\/a>, designed New York\u2019s 124-seat Carversteak at <a href=\"https:\/\/observer.com\/person\/jason-pomeranc\/\" title=\"Jason Pomeranc\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Jason Pomeranc<\/a>\u2019s Civilian hotel.\u00a0\u00a0<\/p>\n<p>The hotel is also home to Carver Road\u2019s <a target=\"_blank\" rel=\"noopener nofollow\" href=\"https:\/\/rosevalenyc.com\/\" data-lasso-id=\"2925238\">Rosevale Cocktail Room<\/a> and <a target=\"_blank\" rel=\"noopener nofollow\" href=\"https:\/\/starchildrooftop.com\/\" data-lasso-id=\"2925239\">Starchild Rooftop<\/a>. Carversteak has taken over the space that was formerly home to Rosevale Kitchen.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"lazyload size-full-width wp-image-1634045\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/03\/Carversteak-NYC-Interior-Photo-by-Brandon-Barre-Courtesy-Carver-Road-Hospitality-4.jpg\" alt=\"\" width=\"970\" height=\"728\"  \/>Carversteak New York has a more subtle approach than the Vegas location. Brandon Barr\u00e9<\/p>\n<p>This Carversteak is a much cozier location than Carversteak at Resorts World Las Vegas, which can seat three times as many guests. But Christie says it\u2019s important to create distinct spaces and encourage guests to come back for different kinds of Carversteak experiences in New York.<\/p>\n<p>There\u2019s a front bar and dining room, an atrium and a private dining room that integrates with the freezer martini bar. Guests enter the restaurant via a gold velvet curtain. But in many ways, Christie is going for subtlety in New York.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"lazyload size-full-width wp-image-1634039\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/03\/CS-Tomahawk-1.jpg\" alt=\"\" width=\"970\" height=\"647\"  \/>The dry-aged tomahawk steak. Anthony Mair<\/p>\n<p>\u201cVegas has, to me, always been something like, you go there, and you take something and supersize it,\u201d Christie says. \u201cYou go for the razzle-dazzle. That\u2019s Las Vegas. I think for New York, we\u2019re doing it in a more subtle tone by choosing incredible plateware and cutlery.\u201d<\/p>\n<p>The Carversteak team has been spending a lot of time poring over details like the colors of plates and how that integrates with what Ontiveros is cooking. Ontiveros, who previously worked at <a href=\"https:\/\/observer.com\/company\/joel-robuchon\/\" title=\"Jo\u00ebl Robuchon\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Jo\u00ebl Robuchon<\/a> in Las Vegas, is sourcing steaks from prime purveyors like Snake River Farms and Flannery Beef. Beyond the Old Fashioned cart, there will be tableside fun with a flamb\u00e9 cart for baked Alaska (known as Baked NYC at this Carversteak) and a wine cart curated by master sommeliers Steven and <a href=\"https:\/\/observer.com\/person\/lindsey-geddes\/\" title=\"Lindsey Geddes\" class=\"company-link\" rel=\"nofollow noopener\" target=\"_blank\">Lindsey Geddes<\/a>.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"lazyload size-full-width wp-image-1634028\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/03\/CSNY1956-B.jpg\" alt=\"\" width=\"970\" height=\"1428\"  \/>Carversteak\u2019s \u201cBaked NYC\u201d dessert is a play on the Baked Alaska. Carversteak<\/p>\n<p>Christie plans to add brunch service in New York soon, and he\u2019s envisioning different treatments for a dessert cart and a Bloody Mary cart that can flip into a Champagne cart. But to be clear, there are no sparklers whatsoever at Carversteak, which once had a cookie dessert with sparklers in Las Vegas and is now sparkler-free.<\/p>\n<p>\u201cI always tie it to things like music,\u201d Christie says. \u201cMusic is defined by decades, usually. I really feel like hospitality is moving so quickly, and sparklers feel very 2010 to 2020 now. I feel like people are coming up with new ways to create that same emotion.\u201d<\/p>\n<p>For Christie, it\u2019s about knowing what you should discard and what you want to hold onto for all time.<\/p>\n<p>\u201cIf 30 years from now, everyone\u2019s saying they\u2019re sick of \u2018choose your weapon,\u2019 we\u2019re still going to do it,\u201d Christie says of Carversteak\u2019s dramatic steak knife presentation. \u201cBecause that\u2019s who we are.\u201d<\/p>\n<p>Carversteak, located at 305 W. 48th St., New York, NY 10036, will be open Sunday-Wednesday from 5 p.m. to 10 p.m. and Thursday-Saturday from 5 p.m. to 11 p.m.<\/p>\n<p>\t\t\t\t<img decoding=\"async\" itemprop=\"image\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/03\/Carversteak-NYC-Interior-Photo-by-Brandon-Barre-Courtesy-Carver-Road-Hospitality-3.jpg\" alt=\"Sean Christie\u2019s Carversteak Brings Las Vegas Sizzle to New York\u2019s Theater District\" style=\"display:none;width:0;\"\/><\/p>\n","protected":false},"excerpt":{"rendered":"Carversteak is opening in New York City.
