The Heims grew their business into a permanent restaurant, now with three locations in Fort Worth and Dallas. <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2024\/03\/19\/barbecue-news-fort-worth-heim-panther-city-bought-baileys-ribbees-goldees\/\" target=\"_self\" rel=\"noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2024\/03\/19\/barbecue-news-fort-worth-heim-panther-city-bought-baileys-ribbees-goldees\/\">They stepped away from daily operations in 2024<\/a> while they focused on their two little girls, ages 2 and 4.<\/p>\n<p class=\"body-text-paragraph\">One Trick Pony brings the Heim family back into restaurants \u2014 and back to the Southside neighborhood. Travis Heim\u2019s roots here are decades deep, as his grandmother grew up in a house on Hattie Street nearby.<\/p>\n<p class=\"body-text-paragraph\">The menu at One Trick Pony is focused on Chicago tavern-style pizzas, which are thin crust and cut into square pieces. Heim is eager to make family-friendly food minus the long cook times typical in barbecue. <\/p>\n<p>Restaurant News<\/p>\n<p class=\"dmnc_features-cta-social-cta-social-module__zWZy- mb-4\">Get the scoop on the latest openings, closings, and where and what to eat and drink.<\/p>\n<p class=\"body-text-paragraph\">Heim laughs. \u201cIt doesn\u2019t take 16 hours to cook a pizza, which is nice.\u201d<\/p>\n<p class=\"body-text-paragraph\">During his so-called retirement, the Heims talked about opening a burger joint. (Travis Heim)<\/p>\n<p class=\"body-text-paragraph\">And does the name One Trick Pony imply that this barbecue family is ready to prove itself beyond the smoker, I asked?<\/p>\n<p class=\"body-text-paragraph\">\u201cI don\u2019t know,\u201d he said. \u201cI\u2019d get bored and do pizzas at the barbecue place. Or at the house.\u201d Now, he\u2019s trying it full-time.<\/p>\n<p class=\"body-text-paragraph\">As a dad of two, he said the restaurant will be accessible to kids. He plans to add cheese sticks and chicken strips to the menu. <\/p>\n<p class=\"body-text-paragraph\">Beyond thin-crust pizzas, One Trick Pony will also sell a New York-style pie.<\/p>\n<p class=\"body-text-paragraph\">The restaurant space, formerly Hot Box Biscuit Club, is a nearly 100-year-old building with exposed brick and steel beams. From the semicircle window in front, Heim can look out on a neighborhood he loves and see more of the city.<\/p>\n<p class=\"body-text-paragraph\">\u201cEspecially at night,\u201d he said, \u201cyou can see all of the downtown Fort Worth skyline.\u201d<\/p>\n<p class=\"body-text-paragraph\">One Trick Pony is at 313 S. Main St., Fort Worth.
